Busy day at Feathered Acres! After a visit to a kindergarten class with a duckling and a gosling, I came home to find that Twyla (our not-quite-a year old rescue goose) had hatched out a baby. Sadly, while she enjoys the incubation process, parenting doesn't seem to be her cup of tea. This means that Foster is in the kitchen with the featherless geese until he gets big enough to hang out with the other goslings. In the incubator, Feathered Acres is pleased to announce the first turkey poult has hatched. He is still wet and pathetic looking, but he is loud! Welcome to the world little puffballs!

Duck-egg Crustless Spinach Quiche (makes 2, each serves 4) 8 duck eggs 2 cups milk or milk kefir 1 cup Bisquick salt and pepper to taste 1 cup fresh baby *spinach, washed and dried 1 teaspoon fresh chives 1 generous cup of grated cheese (I used old cheddar, more cheese is always better.) butter or spray for baking dishes Preheat oven to 400, butter either a large baking dish or 2 pie dishes, arrange raw spinach in bottom. Blend eggs, milk, Bisquick, chives, salt and pepper until well-mixed. Pour over spinach. Pile on the cheese as evenly as possible. Bake for 40 minutes. These quiches freeze well and are delicious cold in lunches the next day, if you have any leftovers! (*Substitute broccoli, fresh peas, sauteed mushrooms or any other vegetables for spinach to suit your tastes!)
