A client of mine shared how she likes to make garlic prawns using our 3-chilli rated Louisianna Creole Dip mix, so I thought I would give it a try - I used 100gm prawns, about 1 tblspoon Intense Garlic oil, 1 clove of garlic and 1/2 teaspoon of the dip mix. Tasty and not "burn your tongue off" hot. If you like it that way, then just increase the amount of the dip mix. I know it sounds weird, but I quite like weird when it tastes yummy. Here is a recipe to use our newly released French Perfume Salt. It contains rock salt, green peppercorns, whole cardamon, lavender flowers, rose petals and star anise single petals. So it is a little bit salty, a little bit peppery, and a little bit aromatic. great to use on fish, chicken and vegetables, but i made ICE CREAM with it. French Perfumed Salt Ice Cream Makes 2 serves • 300ml thickened cream • 2 teaspoons of vanilla extract • 1 teaspoon ground YIAH French Perfume Salt • 4 egg yolks • 1/3 cup caster sugar Method • Bring cream, vanilla extract and ground French Perfume Salt just to the boil and remove from heat. • While that is happening, beat the egg yolks and sugar together until creamy. • Add some of the cream mixture slowly to the egg mixture and whisk quickly. • Then incorporate the egg mixture back into the rest of the cream and return the pot to the stove on a low heat. • Continue stirring until the mixture thickens and coats the back of the spoon (maybe 10 minutes). • Remove from the heat and place in a container and cool and then refrigerate until ready to make the ice cream. • Churn in the ice cream maker and then freeze. Very creamy and rich ice cream. • I served this with some blue berries and raspberries marinated briefly in the newly released YIAH Raspberry Cranberry and Hibiscus balsamic, but the ice cream was interesting enough to be served on its own or with just plain berries.
