Shrimp scampi served over spaghetti squash sounds great for dinner tonight! Healthy and delicious all rolled into one dish. You'll want to make this again and again for you and your family. This is just one example of a great meal you can have while following our nutrition program at The MAX of Five Towns! Give us a call at 516-218-3728 to learn more about our 10-Week program http://www.themaxchallenge.com/locations/five-towns-ny/ Ingredients: 1 spaghetti squash 1 lb uncooked shrimp 3 cloves garlic, finely diced 3/4 cup organic chicken broth (or shrimp stock) 1/2 cooking white wine 1 tsp arrowroot powder 1 lemon 1 tsp red pepper flakes salt & pepper, to taste olive oil 1 tbsp organic butter, such as Kerrygold’s 2 tbsp basil, julienne ◾Preheat oven to 400* F ◾Cut the spaghetti squash in half, scoop out the seeds ◾On a baking sheet, drizzle olive oil, salt and pepper onto the squash, cut side up and bake for about 30 minutes (depending on the size, it may take longer — but it should be fork tender) ◾Using a fork, scrape the flesh from the squash into a large bowl — a la, spaghetti! Set aside ◾On medium heat, add a few tablespoons of olive oil and the butter into a large saute pan and add the garlic* Cook for 3-4 minutes ◾Add in the shrimp, salt and pepper and cook for 2-3 minutes on each side ◾Once shrimp are cooked through, add the wine, chicken broth, and juice of the lemon and let the sauce come to a simmer ◾Sprinkle in the arrowroot powder and stir. Sauce will thicken ◾Serve the shrimp scampi over the “spaghetti” and garnish with basil and a few pinches of red pepper flakes ◾Enjoy!

THE MAX Challenge has it's own cookbook to help someone with breakfast, lunch and dinner choices to help them stay on track with their nutrition. Our nutrition program is easy to follow, with foods you already purchase at your local supermarket. No need to weigh, or count your food portion. Our food choices are just simple. Here is a recipe from the cookbook. Quinoa Crusted Chicken. Make for you or family, either way it is a healthy option. See below for the recipe. http://www.themaxchallenge.com/locations/five-towns-ny/ 4 Organic boneless chicken breasts 1/2 cup uncooked Quinoa 1 egg, yolk removed 1 tsp. Dijon mustard organic olive oil Pam spray sea salt & pepper to taste MAX Nutrition Breakdown 1 Protein Directions: Preheat oven to 375°. Set up 2 baking trays with parchment paper for easier cleanup. In one tray, spread out Quinoa into a single layer. In a bowl combine egg whites, water and mustard together until incorporated. Remove chicken from package, season with salt and pepper, put in egg white and mix. Working one at a time, dredge each chicken breast into Quinoa on both sides. When chicken is covered, places them on a second tray and repeat for remaining pieces. Heat large non stick skillet over medium heat for three minutes then spray olive oil. Add two chicken breast and cook each side for three minutes or until toasted. Repeat. Place chicken breast on tray and finish cooking in oven for 10 minutes.
