What’s seriously yummy and full of chocolate goodness? These choc-chip cookies, of course! Ingredients 1 1/2 cup gluten-free oat flour 11/2 tsp vanilla bean powder or alternative 1 free range egg 1/4 cup rice malt syrup 1 tbs pure maple syrup 1 tbs almond butter1/4 cup softened coconut oil (not melted) 1/2 tsp cinnamon1 tsp stevia 1/2 tsp baking soda pinch of salt 1/2 – 1 cup good-quality dark chocolate, or sugar-free, dairy-free chocolate Method 1. Preheat the oven to 180C. Blend the gluten-free oats in a blender until they become a fine powder. 2. Combine the vanilla powder, egg, rice malt syrup and maple syrup, almond butter, coconut oil, cinnamon and stevia in a bowl and mix everything together until combined. 3. Stir in the oat flour, baking soda and salt until well combine then add desired amount of chocolate chips and mix. 4. Spoon mixture into 12 cookie balls and flatten slightly on a tray lined with baking paper. The cookies spread out while cooking so be sure to leave enough space in between each. 5. Bake for 8-10 minutes until golden brown. Allow to cool for a few minutes before transferring to a cooling rack, then devour!
