PAVLOVA WITH RHUBARB & PISTACHIO INGREDIENTS 5 egg whites 250g caster sugar Juice of ½ lemon 1 tablespoon cornflour 1 tso vanilla essence 6-7 sticks of rhubarb (preferably red) 200g caster sugar 1 tablespoon water 200 ml whipped cream 1 tsp vanilla essence METHOD Preheat oven to 150oC. Place 5 egg whites into a very clean /dry mixing bowl, along with juice of ½ a lemon and beat on medium speed for approx 5 minutes with a whisk attachment until the egg whites are stiff. While mixer is still whisking, gently add in a spoon after spoon of caster sugar until the egg has absorbed the sugar and continue to mix for a further 5 minutes. Add in 1 tsp of white wine vinegar, I tsp vanilla essence and 1 tablespoon of cornflour and mix for a further 1 minute. At this stage, the mixture should be quiet stiff, glossy and form peaks. Spread meringue onto a parchment-lined rimmed baking tray and gently spread into a 7 or 8-inch circle. Place in a preheated oven at 150 oc for 10 minutes and reduce heat to 120 oc for a further 1 hour. Remove from oven and allow to cool completely. Place the large rhubarb chunks in a pot with the sugar and a little water and simmer gently for 9-10 minutes until it is soft but not mushy, allow to cool completely. To assemble the Pavlova, spread the whipped cream on top of the Pavlova and gently place the rhubarb pieces on top of the cream. Garnish with chopped pistachios and serve.
