Wholesome and Nutritious veg Curry for these cold winters evenings! Vegetable Curry Ingredients 2 tbsp coconut oil 1 onion, chopped 1 tbsp fresh ginger grated or finely chopped 2 tsp curry powder 1 can full fat coconut milk 2 tsb natural sweetener maple syrup 2 tsp sea salt 1 red or yellow pepper chopped 1 medium broccoli chopped 1 cup fresh spinach Method Melt coconut oil in a deep pan over a medium-high heat Saute the onion, ginger, and curry powder until onions are soft. Add coconut milk, salt and sweetener Add pepper, broccoli, and spinach. Stir and cook for 3-5mins until broccoli is tender Serve with quinoa or brown rice
