Eric Hendry - Born in Calgary, Alberta, Canada, Eric is a well-traveled young chef. And with that travel comes a wealth of experience for a chef at the age of only 29.
After completing his studies at the Pacific Institute of Culinary Arts in Vancouver, Eric commenced his culinary journey in a small restaurant in Vancouver.
Anxious to expand his knowledge and experience, he traveled to New York via restaurants in The Rockies where he experimented in a variety of cuisine in that city, before heading down to Australia.
It was in Australia that Eric developed his interest in Greek and Middle Eastern cuisine when joining Greg Malouf at ‘Mo Mo’s’, one of Melbourne’s most highly respected restaurants. With six years of experience under Greg’s fine tutoring, Eric developed his passion for Greek, Lebanese and Middle Eastern cuisine. Greg Malouf is regarded as a leading international chef in his field and Eric comes highly recommended through this connection.
After a short period back in his home city of Calgary at ‘Rush’, one of Calgary’s finest restaurants, Eric has been enticed to bring his talent and passion to Olive Greek & Middle Eastern here in Hong Kong.
Again under the connection and guidance of celebrity chef Greg Malouf, who visited Hong Kong as a guest chef in April 2010 and June 2011, Eric is establishing a great reputation at Olive while expanding his international experiences.

BeGourmet: Olive Tagine nights
"We started our dinner with a mezze of hummus, baba ganoush, Fatima’s fingers (sort of like fried cheese straws), pitta bread and pickled vegatables. Although simple we all loved the fatima’s fingers and you can’t go wrong with a silky hummus and a smokey, rich baba ganoush. We shared this between 3 and I would say that it was a generous portion, however, we had no problem polishing it off!" by Be Exposed Magazine
