Whenever I hear a conversation with the phase “Well I heard it was this…” or “I heard it was that...” is there any actual truth to the finish of that sentence? Everyone hears only what they choose to hear. Anyone who knows me, knows that I tell the truth and I always keep it real. Always. No matter who I offend that week. Well here is a sentence that is 100% true. I am officially retired on July 15th. My family and I decided on my 50th Birthday that I wanted to spend the next 50 years R-E-T-I-R-E-D. This cooking career of mine has been rewarding, crazy and at times stressful as hell. But you know what? Its been amazing. We built a restaurant from nothing and did it without business partners, without a franchise name to operate under and had a blast. We met so many great people and words can never say how much we appreciate the loyal customers we have had come through our doors. But also in this business, we’ve also met our fair share of assholes, but I’ll miss the many, many of you too. Man, the stories I could tell. Hmm…I see writing a book in my future lol. We are closing on a high note and not going out the way so many restaurants unfortunately end with a sudden closure followed up with a sad story in the paper. As a local “mom and pop restaurant” we where doing just fine, but we are choosing to end when we want, on our terms and we are so proud of the great team that worked so hard to make it what it is. That goes not only for the bistro staff but also for the hotel staff too. I knew from day one that if I ever chose to open a restaurant in PA it would be in the downtown area. After two years I still stand by that statement. But its also cool that I am finishing my cooking career where I started cooking in PA 18 years ago in this very kitchen. We will probably also be the last restaurant ever in there as the hotel has plans to finally build their continental breakfast room. Was the 22-hour work days with 1 hour of sleep unbearable at times? Shit yeah. Hard on family life? Absolutely. Since we opened I went home maybe 6 times in two years. I want to go home and sleep, sit on the deck and have a beer or two or ten and turn into the old man that yells at kids to get off the lawn. I need to spend time with my son, which is thrilled that dad finally gets to come home “for real”. I promised him a road trip one year and I think it finally may be this summer. My wife spent four years putting herself through school to finally do what she wanted to do for the rest of her life. She had to postpone that to help me with this adventure. She never complained. (Ok that’s a lie) But now she finally gets to do what she worked and studied so hard to do. Wherever she is starting her career is where we are moving! So just remember when you hear someone say “they heard the Boreal Bistro closed because of….” If that sentence isn’t finished with the facts that are written above. Then it’s nothing more then the typical hot air and misinformation. Its been a culinary adventure and remember that you have until July 15th to use up your gift certificates, get your Belgian chocolate candied bacon and SpudNuts! Again, musicians playing here the 1st time love the sound quality in our bistro. No where in PA and one of the best in SK. That's a great compliment! And of course the food.. Thank you!
