We use green onions in most of our food. Green onions are often used as condiments (yakumi) in Japan and are used to add colour and bring out the flavor in many dishes. Green onion also kills bacteria, which can prevent the likelihood of catching cold. There is a superstition in Japan that if you tie a green onion around your neck you will not get sick.

We use Katsuobushi on the Okonomiyaki. Katsuobushi (dried bonito flakes) is dried, fermented and smoked bonito tuna. Shaved into very thin and small slices, it is used in Japan to flavor other food or make broth. Katsuobushi contains many peptides. One of the main health benefits of this fish is that it helps recover from fatigue. It is also helps prevent diseases related unhealthy lifestyles.
