Have you tried our new Oat milk?!? It's made from real oats grown tall and strong in the soil of the earth, naturally containing fibers called betaglucans that are good for your heart! For those of you looking for alternative dairy for your lattes and aren't too fond of coconut milk you HAVE to try this. It's thicker, therefore giving the lattes the same thick consistency as a regular milk latte. Plus it tastes delicious and is good for you. Can't go wrong with that.

Good Morning! Happy Sunday. More on Haiti! After the long, and sometimes dangerous, job of visiting farmers and acquiring truck loads of raw beans & pulp (thanks to Uncommon Cacao for the cool animation from another source we work with, Guatemala!), the mass is brought back to a central facility that ferments raw beans. The standard way to ferment it via a 3 box method in the open air. Raw beans and pulp and loaded a top box where bacteria and yeast from the air get into the sugary pulp that surrounds the beans. The beans heat as the digestion process starts and yeast create ethanol (!) which is then oxidized by bacteria into acetic acid (also known as vinegar). As this process continues, a combination of aerobic and anaerobic fermentation continues. The beans are covered in the box and then every day or two (depending on the method of the facility), the beans are uncovered and moved into a lower box by shovels, thus ensuring 'proper' fermentation by the time the mass gets to the bottom by introducing air at critical times and assure the mass is not too hot or cold. The non-bean pulp ferments and then drains away. The beans darken as they continue in fermentation and a real chocolate flavor, not present in unfermented beans, is developed during this process. Central fermentation helps farmers to ensure a consistent price, quality of fermentation and quality of drying (next post). Prior to centralized fermentation by PISA in Haiti, farmers were generally washing their beans for commodity purchasing which resulted in a MUCH lower price (only 25% of what PISA pays) and therefore had little incentive to produce more cacao.

New beer on tap!!! Burnt City Brewing : Balloon Boy Easy to drink, but hard to pin down, Balloon Boy is a refreshing Belgian-style wheat that is fun for the whole family.
