These simple steps will help protect your commercial kitchen from fire. Clean up the grease. Keep walls, hood filters, hood and work surfaces clear from grease that can build up and restrict airflow. Remove ashes and spent fuel. Clean wood- and charcoal-burning ovens (smokers) everyday. Never throw water on a grease fire. Water will cause grease to spread and turn into a larger fire. Commercial kitchens should always use their fire suppression system in case of an uncontrollable fire. Remove fire risks such as rags, paper products etc. Keep fire-inducing items away from heat and cooking sources. Do not use loose clothing while cooking. Know the quality of your equipment. Almost 60% of restaurant fires involve cooking equipment so watch for frayed power cords, broken gas fired appliances or defective equipment. Do not move fire protection equipment from the cooking line. All to often we see nozzles moved out of the way for convenience. They are there for a reason, if the equipment becomes a nuisance call us and we will move it while keeping the protection in place. In the case of fire, keep area clear for employees and customers to easily evacuate. Install CO detection equipment, it is now law in NYS. Keep your cooking area and kitchen organized. This makes the situation more predictable in the event of a fire or emergencies. OSHA requires employees who are expected to use fire suppression equipment to be trained on their use. Restaurant owners and managers should call a professional company like Empire Fire Protection Services to train the staff on how to prevent fires and react if a fire does break out. To keep your commercial kitchen safe, up-to-code and to ensure that your kitchen, staff and customers are always protected, partner with Empire Fire Protection Services for all of your fire safety needs.

NYS has adopted a new fire code which says that businesses need to have CO detectors installed. There are a few variations to what can be installed per the code. The most cost effective one (and the one we typically install for our customers) is the 10 year lithium battery operated detectors. Call us today for prices.
