Johnny Santiago is Brooklyn born, & with 20 years of experience in the hospitality industry and has worked with several of the country's top restaurateurs. In 1997, Johnny decided to open his own operation. He designed and opened Torch on Ludlow St. This 1940s-style supper club was one of the first Lower East Side's fine dining pioneers. Torch would close a few years later due to an altogether ironic building fire. Gotham Magazine named Johnny as one of NYC's most eligible bachelors in 2010.
When the opportunity arose to open a new place, the boys teamed up & created Jo's, aptly named after Johnny's mother Josephine
