Explore the Terroir of Pinot Noir: Willamette Valley, Oregon

EXPLORE THE TERROIR OF PINOT NOIR: WILLAMETTE VALLEY, OREGON An area of rich soil and misty mountains, the Willamette Valley is recognized worldwide for its Pinot Noir. Meet Scott Shull, a self taught wine maker having learned by "doing" since 1989. Scott strives to craft wines that are interesting to the palate and to the mind—wines of complexity, finesse and place. Scott uses grapes grown in vineyards that represent the great diversity of soil types and mesoclimates in their corner of the northwest Willamette valley, and takes care to separate individual blocks within vineyard designate wines, with the belief that microclimates within vineyards will yield different expressions of pinot noir. J. Christopher, named after Jay Christopher Somers, will bring his Old World style of vineyard management and winemaking — a style that resulted in wines that taste more like the Burgundies he loves to drink. J. Christopher Pinot Noir is made to reflect the diversity of where it is grown, focusing on the Pinot Noir which highlight three individual AVAs within the Willamette Valley. Paired with Chef Greg, this meal will complement each aspect of the terroir of the Willamette Valley Pinot Noirs with grilled, herbal and spicy inspiration. 1ST: CHARRED SWEET ONIONS WITH A POACHED EGG 2ND: RISOTTO WITH HOUSE-CURED HAM AND SPRING PEAS 3RD: BRAISE LAMB WITH MINT AND CURRIED COUSCOUS 4TH: CHOCOLATE GANACHE AND CHERRY JAM Limited to 24 people.
