A progressive European-inspired small-batch brewery in Littleton, NH. We serve wood-fired pizzas and locally-influenced foods that compliment our beers. Schilling Beer Co. is a progressive European-inspired microbrewery centered on the values of family, community and excellence. Three united grain heads in our logo symbolize these values.
Schilling is the embodiment of a long-time dream for our family. We left professions and moved across continents to link up in the North Country to brew together. The name “Schilling” honors our grandfather, Dr. Richard J. Schilling (his picture hangs near our bar), and also reflects the continental European influences on our brewing. Head Brewer John Lenzini, a chemist, educator, linguist and former resident of Germany and Austria began brewing in buckets in grad school in 1996. His best friends/brothers Jeff, Matt and Stuart Cozzens have been drinking it since. Sharing John’s beer with friends is one of our greatest joys.
We brew Schilling beers on a 7-barrel brewhouse here in the oldest commercial building north of Concord, NH—a renovated 1797 gristmill. Though small, this state-of-the-art system enables us to maximize quality and creativity, while producing a variety of European-influenced beers. We conduct much of our research in German—especially when reviving old European beers—to brew styles rare to American craft brewing. These beers are principally available here at our brewery, although we recently began distributing in limited quantities to several world-class New England taprooms in NH, VT and MA.
A rustic method of cooking compliments our brewing style: gourmet Neapolitan-style flatbreads, strombolis and small plates are all prepared in our wood-burning oven that burns hardwood from a local family’s timber stand in nearby Bethlehem, NH. Our simple and intentionally limited culinary approach favors fresh local ingredients that pair well with our beers. Local farms like Prospect, Meadowstone, Small Axe and Mountain Roots (among others) supply us with premium products; these, in turn, are recipients of our spent brewing grain.

Our staff is educated—many are Cicerone Beer Server-certified—and ready to go the extra mile for our guests. Also, note that there’s more to our historic building than the first floor: we offer deck seating overlooking the Ammonoosuc River (weather permitting), a traditional beer garden, and a second-story beer hall that often hosts aspiring local musicians.
