The skillets have cooled, the pancakes eaten and our winner Maggie Lapinski has had a chance to breathe. I got the chance to ask Maggie a few questions about her very eventful and exciting first Pancake Day! Maggie is a 4th grade teacher at Cottonwood Intermediate School. And her students couldn’t be more proud of their teacher, “My students were very excited that I won. I know a lot of them were at the race because I could hear them cheering on that final stretch. A number of them ran over to me yesterday and yelling to me during the parade. I have gotten lots of high fives and hugs from them today. Them being so excited and proud of me really adds to the day”, Lapinski said. Maggie said she had heard about Pancake Day when she first moved here, and wasn’t sure she was going to run the race until some of her co-workers started to encourage her. Excited was the theme of the day, not just from Lapinski’s students, but also from her. Lapinski had this to say about how it feels to be the International Race winner, “I am really excited to win. I had no idea what to expect having not run a race competitively in about 3 years. Even though the race is for fun I don't like to lose so I am pretty happy with the result. Not being from Liberal I had no idea what a big deal this race is. But I am so happy I was able to be a part of the tradition.” And she thinks she would like to run again next year, but get a little bit faster. Lapinski had a very busy first Pancake Day, aside from winning the International Race, she also ran the Pancake Chase 5k Fun Run, attended the kid races, was in the parade and also attended the flipping contest at Cottonwood Intermediate School. When asked what her favorite part of the day was this was her answer, “I think my favorite part of the day was being a part of the whole tradition. I don't think I can pick a specific part. Getting to meet all the people who have been a part of the tradition in Liberal. After the Shriving Service I was able to meet Billie Warden, the winner of the first International Race. I loved meeting all the other women who were competing and just be part of the whole thing.” Lapinski would like to thank everyone that was cheering for her from here and back home.

The Pancake Day Baby Cakes Award this year goes to Julian Keith Meza born 1:24 p. m. Feb. 28, 2017 weighing 7 lbs. 3 oz. and 20 ¾ inches long. Julian’s parents are Juan and Teresa Meza of Liberal. The Baby Cakes award is presented each year to the first baby to arrive on Pancake Day, or the closest day after, at Southwest Medical Center. Julian received a miniature chef's hat embroidered with the Pancake Day logo, a plaque, and a basket of baby necessities. The Baby Cakes Award was donated by Russell Child Development Center. Russell Child Development Center offers FREE services to children and their families across 19 Southwest Kansas counties. With many programs focusing on early literacy, Russell Child Development Center coordinates Learn & Play Parent/Child Play Groups, Healthy Steps helps monitor a child’s health and development, Triple P Positive Parenting Classes, Case Management, and tiny-k Early Intervention services for a child with a developmental delay or disability. Flipping heck: Timer glitch mars trans-Atlantic pancake race
Ok...the busy long extended weekend full of Pancake Day festivities is finally come to an end. It's great to be in Liberal, KS! We have some of the nicest, hardworking and friendly people around. Eating and Flipping contest, Fun Run, Talent Show, Dignitary Reception, a HUGE pancake feed and program, lots of kid's races, Men's Pacer Race and the International Race, Shriving Service, Video conference and a Parade. Only in America can we take a 61.6 second race and turn it into 4 day event! But we do and we do it well because of the many talented and hardworking people around these parts. To my fellow board members...here is a "well done!" and to the community and the visitors that came to experience the only event of it's kind in Kansas...."thank you and we will see you next year! Spread the word...this event just gets better each year!" Now to turn off the computer and go home...dinner was Chinese buffet and my desk is almost clear! Tomorrow is a new day!
