Bolo do Caco description are 'muffin-like' breads from the Madeira islands. They are made with sweet potato and are traditionally cooked on a tile or stone slab above a wood fire. These ad-hoc baking slabs are easy to set up at festivals where you will often find these delicious breads being made right on the spot. All you need is a small wood fire, a tile or a slab of thin stone propped above the fire. Traditionally cooked on an open fire Caco means 'broken piece' referring to the tile or stone that the breads are baked on. Bolo means 'cake', the common word used for bread also. Don't think of 'cake' like we do in the West, cake refers more to the shape. Bolo do Caco are really more like English muffins on steroids because of the sweet potato.

If Portugal were to name a national sandwich, the bifana sandwich would have to be on the short list. Available across every region and sold in every location—from food trucks, to shopping centre food courts, to tiny local hole-in-the-wall snack bars—the humble bifana is easy enough to find and looks easy to make. But don’t be fooled by its simplicity—the basic description of “marinated pork slices in a bun” is deceiving. The popularity of the Bifana sandwich even prompted McDonald’s in Portugal to create a McBifana in 2013… but anyone will tell you it’s a weak imitation. Bifanas are generally considered to be “fast food,” but in a Portuguese kitchen, the thinly-sliced pork is slow-cooked until tender, marinated in garlic, spices and on Franca's Cafe with our special recipe and marinated for days served on Madeira traditional Bolo do Caco, it taste even better after all. Indeed, a well-made bifana sandwich will zap you with a lightning bolt of flavours, and McDonald’s McBifana simply doesn’t compare.

And this is how our traditional Bolo do Caco is made in Madeira, come and have a taste of it with our delicious prego at Franca's Cafe EN - Bolo de Caco - Is a very traditional and signature eat in Madeiran cuisine. Made with sweet potato, it's a round bread that is traditionally cooked on a basalt stone slab. The bread is usually served simply with garlic butter and is usually eaten as a sandwich with typical Madeiran foods like octopus, meat skewers (espetada), and also used as the bread for a typical Portuguese Prego steak sandwich.
