This week on Milk Street TV: Christopher Kimball heads to Violet Bakery in London to learn the secrets to a lighter cake. They then make their version of my Chocolate, Prune and Rum Cake. I had so much fun baking with Chris Kimball when he visited! Tune in if you can. To see where Milk Street TV airs in your area, visit bit.ly/msstationfinder. p.s. That is not me in this picture.
New @violetsessions podcast up with @zandra_rhodes_ and @gracewoodward. We recorded this one live @porteliotfestival with the lovely people at @matchesfashion . Sadly the weather was so terrible that Zandra needed to record earlier than scheduled so she could get back to London and I was on another stage with @russell_norman talking about my kitchen nightmares and missed the whole thing. 😩. But the recording is great thanks to @worgiebeats !!! So sit back, relax, listen to the legend and dream of having a dress named after you. #fashiongoals
At @strausmilk farm, they name every single calf. This one is called Kale. She did look like she was glowing, I have to say. A newborn calf can drink up to 3 gallons (11 litres!) of milk a day and we still need some for us! Some of the industrial farms feed the calves other things to save the milk for the market but these cows get the real thing. Organic cows eat organic feed from organic soil. There are no antibiotics or hormones used on them ever. #organiclife
These cows are Holstein and Jersey. The Jersey cows produce a milk with more fat in it which makes richer cream and is basically my favourite for baking with. But with that benefit comes more work for the farmer. They are a smaller more delicate animal so production costs can be higher. Maker profit smaller. Feeding these animals is expensive too. Farmers have all kinds of creative ways of feeding their lot. @albertstraus told us today of a failed experiment in using sake (rice wine) waste to feed a herd which resulted in drunk cows. Lol. Or partnering up with an organic veggie burger company to get soya by products! It's fascinating. It's a thankless task though and ever-changing. More reasons to thank your local organic farmer today!! #organiclife
Today we took Frances to my friend @albertstraus ' beautiful organic dairy farm. This is the landscape I grew up in and this is the light that I associate with home. Albert is a second generation farmer here and has been pioneering organic practices here for nearly 25 years. It's organic farming that might be the answer to climate change and to saving rural communities. Check out @strausmilk and read the story. Or if you think you know, remind yourself. It's so inspiring what individuals can do. #organiclife
