A story about not one, but two chocolate factories in Wales...

SMOKED BAKED BEANS Spring in the UK has been slow to arrive properly, and in this latest cold snap, we want something filling and warming to fill the gap. These easy homemade smoky beans (made with our smoked water) hit the spot – eat them piled on griddled sourdough or toasted crumpets with plenty of salted butter.

HALEN MÔN SMOKED WATER The 'world's best ingredient' has been revealed and it comes from Anglesey. Smoked Water, produced by Halen Môn, The Anglesey Sea Salt Company, was first developed by the firm for experimental celebrity chef Heston Blumenthal. Top chefs are fans of the ingredient, since it is 100% natural, more consistent than smoking an ingredient yourself and adds either a background savouriness or an intense edge of bonfire depending on how much is added.

ST DWYNWEN'S DAY The end of January can sometimes be a little bleak – dark and cold, with the festive break long behind us. It’s nice then to have a Welsh tradition as a flicker of light at the end of January. On the 25th of the month every year, people all over Wales celebrate St Dwynwen’s Day, the Welsh patron saint of lovers. The story goes the Dwynwen was the prettiest of Welsh king Brychan Brycheiniog’s twenty-four daughters. She fell in love with a different man to the one her father had chosen for her, and prayed to God that she may never marry anyone as she knew she would never be allowed to be with her true love. An angel visited her in her sleep and gave her a potion to erase her memory of feelings for Maelon, the man she had fallen for. Dwynwen then devoted her life to God, setting up a convent on the island of Llanddwyn and praying that all true lovers always be looked after.

SOMETHING FOR THE WEEKEND? MADEIRA SEA SALTED TRUFFLES Madeira is a fitting tipple to add to this sea salt chocolate truffle recipe, as it too has a relationship with the sea. Centuries ago sailors discovered that white wine from the island of Madeira would transform in to a dark, richly flavoured wine after weeks of the sun beating down upon the deck and the gentle rocking motion of the ship on the waves.
