If you are struggling to eat your greens why don't you try a simple smoothie. I have shared one of my favourites. You can add half an avocado too to make it creamy. What's your favourite smoothie recipe? Feel free to share in the comments. Green Smoothie Serves: 1 • 100g-150g kale, stems removed, coarsely chopped • 1 Granny Smith apple, coarsely chopped • 1 ripe banana • 50g loosely packed fresh flat-leaf parsley leaves • 500ml water (plus more if needed) Prepare: Combine all ingredients in a blender, and blend until smooth. If too thick, add a little more water.

F O O D P R E P You’re busy, busy, busy and the thought of having to plan out meals may feel like just one more chore to add to your already long list of things to do. I know! To be honest, it has not always been my all-time favourite thing to do either. What I found, though, is that taking time to plan for meals each week – and writing out a shopping list – means that I ultimately save TIME. It saves MONEY. It means fewer less-desirable CALORIES. And, it means less STRESS. Menu planning saves time because first you know “what’s for dinner” and you won’t have to run to the shops as frequently. It saves money because eating out is so much more expensive than preparing meals at home. It also means less food waste because you’ve only bought the items you need to prepare your meals. You can definitely save in calories too, because many times, we impulse buy, and end up with choosing convenience or processed foods. Or, if you go out to eat, you order items that look healthy, like a salad, only to discover that your meal contains 1,000 or more calories. Finally, planning meals reduces stress because you have a solid plan for your week and you won’t have to rack your brain at the last minute to figure out the age old question “what’s for dinner?” Give it a go this week and let me know how you get on. x

Don't rule out a veggie stir fry for breakfast....👌 This is simple and quick to do and great for using up left over veg in your fridge, add whatever you fancy! I used chopped red pepper, spring onions, asparagus, chopped kale and stir fried it in a wok until wilted then I simply added two whisked eggs, stir through until the egg is cooked. Can be eaten hot or cold 😋 Who else eats veggies for breakfast?
