facebook.comOpen pork and mushroom burgers with sweet potato wedges Serves 4 Ingredients 100g frozen sweetcorn, thawed 400g lean pork mince 2 garlic cloves, finely chopped 25g fresh coriander leaves, chopped, plus extra to garnish 2 large carrots, julienned 1 long red chilli, finely sliced 125g ready to eat beansprouts 2tbsp gluten-free sweet chilli sauce 500g sweet potatoes, peeled, cut into wedges 4 large flat mushrooms, stalks trimmed Olive oil spray 1tbsp olive oil Method Put the sweetcorn in a large bowl with the pork mince, garlic and half the chopped coriander. Season with ground black pepper, then mix by hand until well combined. Wet your hands, then shape the mixture into 4 burgers, each about 9cm diameter. Put on a plate, cover and chill until ready to cook. Combine the remaining chopped coriander with the carrots, chilli, beansprouts and sweet chilli sauce in a salad bowl. Cover and chill until ready to serve. Heat the oven to 220°C/fan 200°C/gas 7. Line a large baking tray with non-stick baking paper, then add the sweet potato wedges in a single layer and spray with olive oil. Roast for 30 min, turning halfway through, or until tender and golden Meanwhile, put a large non-stick frying pan over a medium heat. Spray the mushrooms with olive oil, then fry for 2–3 min on each side until just tender. Transfer to a plate and cover loosely with foil to keep warm. eat the 1tbsp olive oil in the same frying pan. Add the burgers and cook for 7–8 min on each side until cooked through with no pink remaining. Transfer to a plate lined with kitchen paper to absorb any excess fat. To serve, top each mushroom with some carrot salad, then add a burger and garnish with extra coriander leaves. Serve the sweet potato wedges on the side along with any remaining carrot salad. Coffee-rubbed steak with pineapple and cucumber salad Serves 4 Ingredients 2tsp smoked paprika 2tsp instant coffee granules 1tsp agave syrup 2 x 250g lean rump steaks (about 1.5cm thick), trimmed of fat 250g ripe pineapple, diced 1 cucumber, diced 250g cherry tomatoes, quartered 2tbsp finely chopped fresh mint leaves Juice 1 lime 2 corn on the cobs, halved Spray olive oil 1 very low salt vegetable or chicken stock cube 200g wholemeal couscous Method Combine the paprika, coffee and agave with ½tsp water to make a paste. Rub over both sides of the steak. Set aside. Put the pineapple, cucumber, tomatoes, mint and lime juice in a large bowl. Stir to combine, then cover and chill. Heat a griddle or frying pan to medium-high heat. Spray the corn with olive oil and griddle or fry for 10–12 min, turning often. Remove from the pan and keep warm. Spray the steaks lightly with olive oil, add to the pan and cook for 4 min, then turn and cook for a further 2 min. Remove to a plate, cover the steak with foil and rest for 5 min. Meanwhile, make up the stock with 300ml boiling water and use to prepare the couscous according to the pack instructions. Fluff the grains with a fork. Slice the steak and serve with the salad, corn and couscous. YOU KNOW A PINEAPPLE IS RIPE if the leaves come away easily when pulled. Nutrition per serving 430
Tomato toasts with scrambled eggs, herbs and olives Serves 6 Ingredients 750g ripe tomatoes 2tbsp extra-virgin olive oil, plus extra to serve 5 garlic cloves, 3 crushed, 2 peeled and left whole 1tsp chilli flakes, plus extra to serve 8 eggs 3 short crusty baguettes, each halved lengthways 8 fresh marjoram or oregano sprigs, roughly chopped 18 pitted kalamata olives, sliced into slivers Cayenne pepper, to sprinkle (optional) Method Halve, deseed and roughly chop the tomatoes, then drain through a colander set over a bowl. Heat 1tbsp of the oil with the crushed garlic in a non-stick frying pan over a high heat. As soon as the garlic sizzles, stir and quickly add the tomatoes so the garlic doesn’t brown. Cook for 3 min without stirring, just to heat through but not break down. Mix in the chilli flakes. Meanwhile, crack the eggs into a bowl and break up with a fork. Heat a large non-stick pan over a low-medium heat, then add a splash of the remaining oil. Pour in the eggs and stir constantly over a low heat, using a wooden spoon to scrape the egg as it sets in the bottom of the pan and around the edges, adding it to the runny mixture. Continue to stir into wet curds for about 2 min or until done to your liking. Heat a non-stick griddle pan over a high heat and toast the bread on the cut sides. Remove from the pan, then generously rub the toasted sides with the whole garlic cloves and the remaining oil. Fold most of the herbs into the tomato mixture, then very lightly fold in the eggs. Divide the mixture among the garlic toasts, then scatter with the olives, extra chilli flakes and the remaining herbs, with an extra drizzle of oil. Sprinkle with cayenne pepper, if using.
