Sticky Toffee Pudding by Rachid Zaouia Executive Pastry Chef • 200 grm of dried dates • 200 grm of Caster Sugar • 65 grm of butter( soft) • 150 grm of flour • 3 whole egg • 15 grm of backing powder • 15 grm of Backing soda • Spices: cinnamon, nutmeg, five spices Toffee sauce: • 100 grm of muscavado sugar • 150 ml of pouring cream • Just enough water to cover the sugar Nutmeg crème fraiche: • 100 grm of crème fraiche • 1 Whole nutmeg Method Sticky Toffee Pudding: 1. Place the dried dates in a sauce pan with a little water and cook until the dates are rehydrated and the water is almost evaporated. 2. Combine the butter and the caster sugar together in a mixing bowl and whisk until the butter has softened. 3. Add the eggs, flour and spices and mix again until it forms a smooth paste. 4. Add the backing powder and backing soda to the dates mix. Add this mixture to the egg and butter dough. 5. Pour the mixture into a mould and cook at 130 degrees for about 1 hour or until the cake is fully cooked. Toffee sauce: 1. Combine the sugar and water and cook until the mixtures reaches a nice caramel colour. Slowly add the cream to the caramel. 2. Pour over the Sticky toffee pudding and enjoy

Please join us in welcoming Rachid Zaouia to our sales team, as our new Business Development Manager based in Cork. Rachid has a very credible background in the hospitality sector and we are delighted to have him join our team at Richardsons. We are confident that he will be a big asset to both ourselves and to our customers. Rachid hails from France but it is safe to say he is one of our own now after spending the past 10 years here in Ireland working in The K Club in Kildare and up to recently in Fota Island Resort in Cork. Rachid is an accomplished Executive Pastry Chef. He brings with him impressive experience from Catering, Food & Beverage and Hospitality Management. He is also well known for his guest-chef appearances on TV3s Six O'Clock Show. You can catch Rachid on 4th January 2018 on TV3’s Six O’Clock show where he will be doing a live cooking demonstration using Richardsons finest ingredients!
