Ground & Co Salthill, adding another reason to head for the sea. Entrepreneur and well-known café owner Kevin Nugent has created Ground & Co just beside Galway Aquarium in Salthill.
Early power breakfasts fuelled by creamy oats, eggs your way and freshly squeezed juices, herbal teas and coffee of course, or grab it all to go including coffee, relax into a lengthy brunch or mid-morning freshly baked scone or sweet bread…. Lunch at Ground & Co is all about the sourdough sambos, power bowls and old school classics, Ground & Co is the daytime joint you want to pop into.
Lunchtime is all about salads and sambos, the Ground Mezze plate-falafels, Hummus, pickled cucumber, cabbage, and toasted pittas flips that menu and celebrates the veggies. The Sourdough sandwiches at Ground are a satisfying mix of local produce on freshly in house baked breads.
Sweet treats at Ground are all made in house by pastry chef Pasty, the breads will range from Sourdough to brown soda, they will be made daily. The desserts, pastries and cakes will change everyday so checking the specials board is a must as soon as you pop in.
All food and coffees are good to eat in house or to grab n go. Ground & Co is open 7 days a week, Monday to Friday from 7:30am to 6pm and from 9am to 6pm on the weekend and Bank Holidays.

Over three years ago Lisa Mongan left a big void in Mr Waffle when she moved to Canada, see embarrassing photo!!!. She came home in 2017 at the best possible time and has been with us from the very start of our journey with Ground & Co. Lisa demonstrates exactly how far we’ve come as a business and why we have grown so much in two years, it’s because the great staff I have we’ve done so much. I am so very grateful for my team, now more than ever before for there support and encouragement, it even blows me away. So today we began a new journey and opened our newly refurbished Delight Food & Coffee. Since first talking to Paula on buying the business I’ve been looking forward to this moment so much. We, Steph, Niamh, Leroy & I, have been planning our new branding, interior and our plans for the future of Delight. We’ve spent countless hours of planning and had a long ten days of working onsite. For a small space it’s been one of the most challenging fit outs, Raceweek is a hard time to get people to work it turns out!!!! But I’d like to say an absolutely huge thank you to Gary Ryan for working so hard on the fit out, hope ye all agree that it’s savage, he never lets me down and delighted with the finish look. Dan Gardner for adding his unique style and banter to the job!!! James Cox painting, coming in late nights and early mornings to keep me happy!!! Clora for helping guide my ideas on the interior ideas, I think it’s savage. And to Shane O Malley for producing our amazing feature wall, I absolutely love it. So that’s it, we are now open for business in Delight Renmore. Open Mon-Fri 8:00-16:00 and Saturday’s 9:00-16:00. Cant believe it really, back where it all began for me. We open our next project Delight tomorrow afternoon. But this is what the whole business is about. Our store manager from Mr.Waffle Amy and store supervisor here in Salthill Emma dropped in to check on their good friend and newly appointed operations manager for Delight Steph. When you have that level of support going through a business it’s hard not to be immensely proud of just how far the business has come. Absolute joy to see....

We have commenced refurbishment works on our new project Delight cafe in Renmore!!!! We have spent three months putting together a new look for the business, a new interior, some small menu changes and promoted a fantastic leader Steph from Mr Waffle to bring Delight to my vision for the business. So last Friday was a very special day. After 18 years Paula has moved on to spend more time with her family. Since we began negotiations to take over Delight, Delight will live on, Paula has been a pleasure to deal with. The love of her business was always very evident. We wish Paula all the very best in her next chapter. For now, watch this space and follow Delight for updates. Open as usual this week and close next Friday, 26-07, for ten days to renovate and bring a new look!!!!

An incredible extended interview with Kevin this morning and Galway Bay FM Keith Finnegan. The interview really showcases how hard starting a business is and there is always a breaking point, 2012 was that time for Kevin but with support from Rachel and his family as well as staff, Mr Waffle is now stronger and busier than ever. Ground And Co and Baby Ground as well as Saol Cafe and now two more eateries. One of the main talking points of the interview was the relationship between us all and Cancer Care West. We took over the catering for Cancer Care West in January 2018. “It is a privilege and honour to look after the guests at Inis Aoibhinn (The Cancer Care West respite House), particularly during this part of the journey. Our aim is to look after each guest and make their stay at Inis Aoibhinn as comfortable and enjoyable as possible. We always make sure that we brighten their morning and evening with a smile and a warm and nutritious meal,” explained Niamh Gallagher who heads up operations at Ground and Co. Food is a vital part of recovery and people who are in Inis Aoibhinn can avail of breakfasts (Tuesday - Friday) and evening tea (Monday - Thursday). The always upbeat and so humble Dragos delivers fresh food daily and always has a smile for everyone...nothing is ever too much trouble. Aisling Curran is there on a full-time basis and she looks after all the guests, like they are her family.
