Pancake Tuesday tomorrow - just tested these lovely oat pancakes, gluten free and dairy free if you use almond milk or coconut milk. Really tasty!! Had to use more milk than what was in the recipe, and added extra cinnamon..

Quinoa and Cacao Cripy treats 60grams popped/puffed quinoa 35grams raw cacao powder 4 tablespoons of pure maple syrup or honey 5 tablespoons of coconut oil 2 tablespoons peanut butter (or an other nut butter) Place the coconut oil, cacao powder, maple syrup and nut butter into a saucepan and gently heat it for a few minutes until it’s totally smooth and melted. While this melts pour the quinoa pops into a mixing bowl. Once the mix has melted pour it over the quinoa pops and stir it all together, until all the quinoa pops have been covered in chocolate. Place into a tray lined with cling film, and flatten until .it's nice and smooth Place in the freezer for twenty minutes, take out and cut into squares, serve and enjoy!

Gluten free Banana & Blueberry Muffins/Loaf Recipe as follows - 2-3 bananas, 4 eggs, 3 tbsp maple syryp, 60ml melted coconut oil, 300g ground almonds, 1 tsp baking powder, 1 tsp cinnamon (or more), 100g blueberries. Method: Mash the bananas, melt the coconut oil, and basically mix everything together. Make in a loaf tin or muffin tray. Bake at 170 degrees - Loaf take 50-60mins, muffins take 20-25mins

Hubby took to the kitchen tonight - everything homemade. Coleslaw, lamb burger and bun, sweetpotato fafelels, spelt onion rings. Absolutely delicious and enjoyed by all the family.
