(English follows Japanese) 久しぶりに新しいラーメン店のご紹介です。 大阪に本店を持つ「鶏そば座銀」さんが今週香港島の跑馬地(ハッピーバリー)にソフトオープンしました。 お店作りは和風で大人な空間。ラーメンはクリーミーで高濃度ポタージュ仕立の鶏白湯がいただけます。トレードマークは立体的にスープの上で舞う揚げごぼうと何とも美味しそうなレアチャーシュー。麺はやや低加水でやや平打ちの中細ストレート麺。ツルツルと歯切れの良い食感があります。 競馬観戦でハッピーバリーに来た時には是非お立ち寄り下さい。 Hi everyone. It has been a while. This is a post for a new ramen shop in town. "Tori Soba ZAGIN", originally from Osaka, Japan, has begun their soft opening from this week at Happy Vally, Hong Kong island. The atmosphere of the shop has unique modern Japanese style. Soup ramen is creamy and thick potage chicken soup. On top of the soup, you can see fried burdock root dancing and you also see rare char siu lay on the edge of the bowl. Looks very gorgeous and also very tasty. If you happen to visit happy valley for horse racing, make visit to this shop as well. I'm sure you will like it.

Do you know there is a brand/name on noodle flour? What we use noodle flour called "Aramusha" milled by Nisshin Flour Milling Co. for "Ramen Taifu" and "Ramen Isaba Taifu" ramen noodles. This flour provides strong springy-ness and strong taste of flour which mix well with Taifu's ramen noodles. Please look for this flour brand on the wall when you visit Taifu next time!! (English follows Japanese) 香港も本格的に夏になってきましたが、皆さんいかがお過ごしですか?私は早めの夏休みで沖縄に行ってきました。沖縄と言えば、「沖縄そば(ソーキそば)」ですが、ここは香港に「黒龍」という屋号で2店舗も構える沖縄に本店をもつ「夢ノ弥」さんにお邪魔してきました。ドロドロ系のつけ麺とラーメンを完食。流石は本店、とても美味しかったです。皆さんも良い夏休みお過ごし下さい! Hello, everyone. Summer has arrived. How are you spending your summer days? I was on a trip to Okinawa for vacation last week. You might expect "Okinawa Soba" for traditional noodle dish in Okinawa, but this report is a ramen place called "YUME NO YA" who also has 2 shops in Hong Kong called KOKURYU. The menus are pretty similar to the one in Hong Kong. They serves tsukemen and ramen with very thick soup base and they are super tasty. Hope you can visit them once next time you visit Okinawa. Hope you guy enjoy the summer!!

(English follows Japanese) 漁場台風さんの1周年記念特別ラーメンが今週土日に迫りましたね。光栄な事に漁場台風さんから弊社にこのラーメンに合う麺を依頼され、本日製麺完了しました。通常の漁場台風さんで使用しているラーメン用と比べ厚みは一緒ですが麺幅を細くしております。細くする事によって麺にスープが良く絡み、より今回の特別な漁場台風さんのスープを美味しく召しあがれると思います。是非ご賞味下さい! ISABA TAIFU's 1st anniversary ramen event is coming soon at this weekend. We are very pleased to be asked by ISABA TAIFU to make custom noodle for this event. The custom noodle is much thinner than usual. This will improve the noodle to grip more thick soup base. Hope you guys like it!!

(English follows Japanese) 元祖つけ麺で知られる「大勝軒」、いよいよ香港にcoming soonだそうです。細かく言うと、昨年お亡くなりになった大勝軒の創業者、山岸一雄さんのお弟子さんのつけ麺屋ですね。屋号は「大勝軒まるいち」です。 Known as implementor of Tsukemen (dipping noodle), TAI SHO KEN, is coming soon in Hong Kong. Seems like tsukemen is getting attraction in Hong Kong people. Hope this trend continue!
