Some sourdough english muffins, in process this morning. This sourdough comes from a strain that went over the Chilkoot Trail from Skagway, Alaska to her home in the Yukon during the Gold Rush of 1898! "Chilkoot" as I call her, has now blended with the local yeasts to make our very own "skookum" strain. There are three active sourdoughs in use in our bakery: "Fran" for the bread, "Chilkoot" for the English muffins and "sauie" who is young and in training.
