At M&B we use a Large Black Hog which is a heritage breed pig. The meat is slightly darker in colour and has micro marbling throughout the fibres of the meat. Giving it the lean look, but with a juicy old world flavour. How do you thank the man who makes your lifelong dream a reality? A Facebook message can't possibly begin to describe my gratitude for all that Ion has done for my career and my dreams....Without Ion I wouldn't be where I am today, and I wouldn't love coming to work, and walking though the doors of M&B everyday. I can't possibly thank you enough, Ion, for being an inspiration and mentor throughout this journey.
