With the receding waters and warmer weather springs wild edibles! We are so lucky to have so many varieties available to us here in New Brunswick! The very popular fiddle head, clover, dandelion, burdock, and young cattails shoots are just a start to name a few! Try out this wild edible pesto to use as an addition to your pasta or however you please! 🌱🍅🍋 Dandelion & Sun-dried Tomato Pesto -1 bunch of freshly harvested dandelion greens -1 cup of pine nuts -1/2 cup of sun-dried tomatoes (rehydrated with olive oil) -4-5 cloves of garlic -2 Tbsp olive oil -2 Tbsp lemon juice -salt & pepper to taste

Le Den is a proud supporter of another local farmer! Mr. Henk Tepper, New Brunswick farmer of the year 2000! Mr. Tepper supplies our restaurant with fresh, local, free range, cage free grass fed chicken and eggs! 🍳🥚🐔 The chickens are currently staying warm in their shelter, however in the warmer months you can catch a glimpse of them frolicking in the grass and feeding from the earth. Mr. Tepper provides produce and feed year round. His farm is located on Route 108-2424 Drummond, N.B.
