We grow, harvest, dry and process high-quality hops, supplying local craft brewers and other beverage ventures. We are located in Caledon, just an hour's drive from Toronto.
We established our first hop yard in 2011. In 2013, we underwent an expansion adding 1400 plants, just under 1.5 acres.
We grow six varieties; cascade, nugget, mt. hood, willamette, fuggle and an ontario heritage hop (yet to be tested). Each variety has distinct characteristics, making it either an aroma, a bittering or a dual purpose hop. We have plans to add more varieties as our farm grows.
Hops take three years to establish themselves for a mature output/yield. They grow like vines (but are called bines) onto trellises reaching 18-22 ft in height. The flowers, or better known as cones, are harvested in late summer, dried down to 8% moisture content and packaged and sold as either whole leaf hops or can be processed into a mill or pellet form. Alternatively, we also offer fresh hops of the bine to make specialty one-off harvest batches, otherwise known as wet-hopping.
We believe in growing as naturally as possible. Growing 100% organically is difficult to achieve especially since hops are prone to a host of diseases, viruses and pests. Every year, armed with more knowledge and tools in our organic arsenal, we are achieving good yield levels. Though these yields may be less than other conventional growers, we believe its worth producing a product that we can stand behind and be proud of.
