The kids were hankering for some dessert tonight . We don't often have dessert . But in 5 minutes we whipped up a healthy treat and they were relaxed eating their treat and chattering about their day . Healthy Cherry Choc Ice-Cream Serves 4 Ice-Cream: 2 x frozen bananas 2 cups frozen cherries 🍒 4 tablespoons coconut cream Chocolate: 2 tablespoons cacoa 2 tablespoons coconut oil soft or liquified 1.5 tablespoons pure maple syrup Place the chocolate ingredients into a bowl and stir until combined Place the ice-cream ingredients into a food processor and blend on high until resembles ice- cream Spoon ice-cream into a bowl and top with chocolate. Enjoy
Great day for cooking Anzacs with the kids ! 1/2 cup coconut oil melted 1/2 cup maple syrup OR 1/2 cup honey 1 cup almond meal (can sub for spelt flour if you cannot have nuts) 1 cup shredded or desiccated coconut 1 cup of almond flakes (can sub for quinoa flakes if you can't have nuts) 1/2 teaspoon gluten free baking soda Preheat oven to 160 c Line a tray with baking paper Place coconut oil and maple syrup in a saucepan over medium heat until combined and stir well In a seperate bowl mix all dry ingredients except baking soda Dissolve baking soda in 1 tablespoon of boiling water and then add to the oil mixture Pour wet ingredients in with dry and mix to make a cookie dough With wet hands roll the dough into walnut size balls and press flat with the palm of your hand or a fork Bake for 10-15 mins or until golden brown Leave to cool before serving Tip : if your allowed cinnamon you can add 1 teaspoon of cinnamon to your dry mix . Cinnamon helps improve insulin sensitivity and reduces the spike you may get from the sugars
Hi guys ! Hope you've had a lovely weekend . When you're not allowed cows dairy cheeses it can be hard to find a hard goats or sheeps cheese to switch to that's both mild in taste but still packed with flavour. This is the one we use . The kids love it and I've popped in out on platters before with both kids and adults alike all saying what cheese is that? It tastes fantastic! You can purchase from Woolworths across from the meat section in a stand alone fridge for $11.99 but if your down in Pakenham on a Tues or Friday 9-4 pm Europa cheese factory stock this cheese as well as a sheeps version for a 1/3 of the price .
The best little sausage roll recipe yet! My kids love this one . I have also used the pastry recipe from here to make chicken and corrainder sausage rolls and party pies for kids parties. It works so well and is very versatile. Gluten free, Grain free, Wheat free, Dairy free. Simple quick and easy ... 400g Beef mince 1/2 onion, diced 1 clove garlic, grated pinch salt and/or black pepper 1 teaspoon all spice 3 teaspoons dried dill 1/2 teaspoon chopped chives 1 carrot, grated 1 zuchini, grated 5 shitake mushrooms 2 egg whites Pastry: 200g (2 cups) of Almond meal 2 eggs 3 tablespoons coconut oil , melted 1/4 teaspoon baking powder Prehaet oven to 170 c. Line a baking tray with baking paper. For the pastry: Combine the almond meal, eggs, coconut oil and baking powder in a bowl and mix to form a wet dough. Refrigerate for 30 mins Filling: Combine mince, onion, garlic ,salt, pepper, all spice, herbs and vegies and mix well.Add one egg white to bind and set aside. Remove pastry from the fridge and place in between some baking paper. Roll out using a rolling pin until 5mm thick. Cut it lengthways into two rectangles. Divide the filling between the rectangles then roll up. Seal dough edges with remaining egg white and pastry brush. Slice into six or so pieces. Place on tray and in the oven for 35-40 mins or until golden and filling is cooked .
