A Banana Cheezecake challenge from a friend: To rawify a traditional granita biscuit based, cream topped, baked cream-cheese cake!! Noone said it had to be fat-free ;) This is what I came up with: * Banana Creme Cheezecake * Base: 1C activated buckwheat (soaked and dehydrated) 1/2C shredded coconut 1/3C golden linseeds (roughly pre-ground) 1/4t salt 1-2T maple syrup melted coconut oil (@3T?) Process dry ingredients together until fine crumbs. Drizzle maple syrup and melted oil in until crumbs begin to look sticky. Add a few drops of water rather than more oil if needed. Press crumbs into the base of a lined (for easy removal) springform tin. Set in fridge while making filling. Filling: 2C soaked & rinsed cashews 3 very ripe bananas 3T lemon juice 1/3C fresh watee 1t vanilla essence/extract 1/3C coconut nectar 1/3C coconut oil, melted 2T lecithin Blend all ingredients except oil together in high-powered blender, until creamy. Add a dash of water if needed. Add oil last and emulsify. Pour over base and set in freezer for a few hours minimum. Optional topping (Quite creamy enough really!): Ayam 100% coconut cream - 1/2 tin coconut nectar to taste a pinch of salt & dash of vanilla essence Blend. Voila. Pour over set filling and reset in fridge. Garnish with slices of ripe banana! Using my springform instead of tart tin mightn't have been the best idea for texture/weight ratio as this is a super creamy cake! Try it with your removable bottom tart tin if you can. More suitable portions - more easily cut ;) Decadent Date Caramel sauce: 1/C soaked or fresh dates soak water as needed 1/4C coconut oil, melted 1T mesquite powder 1T lucuma powder 1-2T maple syrup Blend dates & water, then add powders then oil, then maple syrup if needed, in small whiz-bang bullet until desired consistency! Add more water to create pouring consistency. This will keep and set in fridge for weeks, simply stand in hot water to melt again!

Ta-dahhhhh!!! Surprise! We have an inspired presence in the kitchen again!! Actually, simply a kitchen again haha! ;) My humblest apologies for having left this succulent, sharing space high & dry for oh so many moons... With no permanent home to unpack and prepare in, life has been la-la-la-la looking a *lot* different. After exploring abundant international countryside then wandering and seeking home on my own golden soil for close on a collective year (!), the news I am happy happy happy to share is that I have now returned to my home town, Adelaide ~ to re-establish my roots, build a culinary and sensually appreciative community and create some vavavavoom! Aaaand so, Raw EnerQi goodies and services shall oh so soon be available here in the ever-up-and-coming RAdelaide of South Australia.
