This month we are partnering with The Stidham Family of Yukon in raising money for their son Brock in order to get a service dog. Brock is a 22 year old young man that has Down Syndrome and Austism. With those 2 conditions come alot of challenges. More challenges than any awesome boy should ever deal with. The Stidham family is raising money for Brock to have a service dog. The cost of the dog is about $10,000. The service dog is going to allow freedom and independance. Something of which does not come easy for Brock. His potential service dog will assist with basic daily living skills, emotional distress, blood sugar awareness, sleep apnea and numerous other tasks that we all take for granted. Please join us in our efforts to get Brock and his family closer to their goal! Bring all your friends and family for a great time of fun! $15.00 minimum donation per person

#TastyTuesday Chicken Skillet with Sweet Potatoes, Apples and Brussels Sprouts Ingredients: 1 tablespoon olive oil 1 pound boneless, skinless chicken breasts, cut into 1/2-inch cubes 1 teaspoon kosher salt, divided 1/2 teaspoon black pepper 4 slices thick-cut bacon, chopped 3 cups Brussels sprouts, trimmed and quartered (about 3/4 pound) 1 medium sweet potato, peeled and cut into 1/2 inch cubes (about 8 ounces) 1 medium onion, chopped 2 Granny Smith apples, peeled, cored and cut into 3/4 inch cubes 4 cloves garlic, minced (about 2 teaspoons) 2 teaspoons chopped fresh thyme or 1/2 teaspoon dried thyme 1 teaspoon ground cinnamon 1 cup reduced-sodium chicken broth, divided Directions: Heat the olive oil in a large, nonstick or cast iron skillet over medium high, until hot and shimmering. Add the chicken, 1/2 teaspoon kosher salt, and black pepper. Cook until lightly browned and cooked through, about 5 minutes. Transfer to plate lined with paper towels. Reduce skillet heat to medium low. Add the chopped bacon and cook until crisp and brown and the fat has rendered, about 8 minutes. With a slotted spoon, transfer the bacon to a paper towel-lined plate (I simply laid another paper towel on top of the plate with the chicken, then stacked the bacon on that). Discard all but 1 1/2 tablespoons bacon fat from the pan. Increase skillet heat back to medium high. Add Brussels sprouts, sweet potato, onion, and remaining 1/2 teaspoon salt. Cook, stirring occasionally, until crisp-tender and the onions are beginning to look translucent, about 10 minutes. Stir in the apples, garlic, thyme, and cinnamon. Cook 30 seconds, then pour in 1/2 cup of the broth. Bring to a boil and cook until evaporated, about 2 minutes. Add the reserved chicken and remaining 1/2 cup broth. Cook until heated through, about 2 minutes. Stir in reserved bacon and serve warm. #VitalityMill #FitnessTips #HealthyEating
#TastyTuesday Healthy Tuna Noodle Casserole Ingredients 2 cups dry whole wheat rigatoni, cooked according to package directions 1 cup onion, diced 1 cup bell peppers (any color), diced 4 cups fresh baby spinach, packed 2 and 1/2 cups frozen peas 8 to 12 ounces chunk light tuna, packed in water (any amount in this range is fine) 1 cup low sodium chicken broth 1/2 cup plain full fat Greek yogurt 1/4 cup 2% or whole milk (or plain, unsweetened almond milk) 1/4 cup sharp cheddar cheese, shredded 2 tablespoons dijon mustard 1 teaspoon ground black pepper 1/2 teaspoon garlic powder Instructions Preheat oven to 375. Cook pasta according to package directions. Leave it "al dente" – just cooked/still a little chewy. In a large pan, saute onion and bell peppers in a little oil or cooking spray over high heat for a few minutes, until onions are translucent. Add baby spinach and frozen peas and reduce heat to medium. Cover, stirring occasionally, until peas are no longer frozen and spinach is fully wilted. In a large bowl, mix together cooked pasta, the sauteed veggie mixture, and all other ingredients. Pour mixture into a casserole dish. Bake 40 minutes. #TastyTuesday Spring break is here already!! With the kids being around the house more this week I’m sure you’re hearing “I’m bored” or “I’m hungry” much more. Instead of taking the so-called easy route and giving them chips, candy, or microwave dinners, try a few of these ideas to keep your kids from snacking on food that’s terrible for them all day long. * Fruit sandwiches – sandwich a thin piece of low fat cheese between two apple slices * Frozen grapes and strawberries – Throw a few in a bag and into the freezer. These are easy snacks to travel with as well. * Peanut butter and …. – Peanut butter makes for a great dip and because it’s packed with protein it’ll help keep the hunger at bay. * Granola, fruit, and Greek yogurt – Mix em all up and store in small food containers in the fridge. The fruit will off-set the bitter in the Greek yogurt which is the main reason people don’t like Greek yogurt. This option is better than store-bought yogurt pouches because there will be less preservatives in it. (which also means it won’t last as long, so eat up!) Having to muster up the willpower every single time you go to the gym leaves many opportunities for you to “Just skip today” or “Just miss ONE workout.” We all know that leads down a slippery slope.
