Wisconsin Farmers Market Association
Farmers Markets are starting to open as spring and warmer weather are on the horizon. One of the joys of spring is Rhubarb. Many of us growing up around this area can remember days of Rhubarb pie from our grandmothers or perhaps we prepare it ourselves today. The Wisconsin Farmers Market Association put together this nice post a few days ago: Rhubarb is one of the great joys of spring, with its rosy color, earthy tang and old-fashioned allure. Choose fresh stalks that are firm and crisp, not limp. There are some good varieties that are green, but redder stalks from field grown varieties are often sweeter and richer. Botanically, rhubarb is a vegetable, however it's primarily used in fruit applications. Flavor Pairings http://bit.ly/2pwo5T3. Preservation Techniques http://bit.ly/2p8jVhM
