Growing up, my mom and Nana's version of tacos were rolled tacos. They would carefully be filled with delicious meat rolled up and fried until crispy. Today, we took Dr. Jay's amazing meats and made Beef Brisket or Pork Butt Rolled Tacos. To go along with that we changed up our usual Tuesday Daily Side of Red Beans and Rice to Refried Red Beans & Spanish Rice, we also have fresh salsa, chips, pistachio pudding, Tres Leches Cake, and maybe even a little horchatachita!! We were only able to roll so many tacos before activating my simultaneous arthritis and carpal tunnel syndrome so supplies are limited.
