Just watched last weeks tricks of the restaurant trade and it talks about using words like fresh , homemade, handmade and it shows that the big chains have nothing homemade or scratch cooked at all. I would just like it to be known that we roast our own joints of meat, make our coleslaw with actual vegetables that we slice and grate ourselves. We grate blocks of real cheese, mature cheddar, red Leicester, Lancashire cheese. When i make chilli con carne i start with mincemeat, onions, tomatoes herbs and spices, beans and it slow cooks for 5 hours. I roast the beef for hot beef, i poach chicken for hot chicken, i physically make the burgers with raw ingredients. I make the chinese curry with herbs and spices and fresh vegetables that we cut, peel and slice. The breakfasts are cooked fresh to order. The salad sandwiches and salad boxes are prepared to order with vegetables that we chop and slice ourselves. Yes its hard work but we wouldn't have it any other way. Just saying, that's all. Cooked fresh, eat fresh.
