RAINBOW TROUT AND PESTO PASTA We love members trout recipes. This is from Alun Thomas. Take a fillet of Rainbow Trout which has been descaled and properly cleaned. Soak it in salted water for between one and 90 minutes (this brings out the flavour). Wash the trout under cold running water and then steam for twenty minutes. Whilst the trout is being steamed boil the pasta (50 to 60g per person is usually adequate) and prepare a salad to go with your dish. When the trout has been steamed remove the skin, flake the flesh and add to the cooked and drained pasta, to which green pesto (available from supermarkets) has been added and mixed. Serve with a sliced baguette and a glass of cold white pinot grigio. This is a quick, easy and healthy recipe that be enjoyed at any time of the year. This dish can be made with any kind of pasta – spaghetti, linguine, tagliatelle etc. Salad of choice: tomato, carrot, fennel and olives drizzled with balsamic vinegar. Spring fishing tips from Peter Cockwill - our local resident guru from Albury Game Angling— Early season at Albury means just one thing :- the buzzer hatch is going to happen and it’s the perfect time to fish small flies on a floating line. Time and again I am told that ‘I can’t catch on buzzers’ but let’s face it. This is the main food item for trout so why not give them what they feed on instead of big fluffy flies. Any time you see rise forms it will be to the hatching stage so you can then confidently fish emergers or klinkhammers and cast ahead of the rise or just leave static in the area of activity. Rises are usually very positive and just tighten soon as you see it. There’s no point in waiting. Otherwise use a superglue or slow sink buzzer but you absolutely must fish these extremely slowly. Really slow! Use at least 12feet of 5lb leader either level or tapered. Point the rod tip down the line so that you have a chance to feel the take as you can’t possibly watch it all the time and ANY movement just raise the rod. Trout can take and reject a fly without any indication on your leader so you must react to the slightest sign. 5 or 6 weight rods are best but you can have great fun on calmer days with your ‘Tillingbourne’ rod and expect fantastic fights at this time of year while the water is cool and oxygen rich. Look at the margins on the downwind shore and you will see the empty buzzer shucks and that’s a great way to judge the size of fly to use but a size 12 or 10 will probably be best.
