Love chilli jam?....with cheese or in a bacon sandwich maybe? Here is one of my favourite ways of using it, chilli jam mushrooms. I keep the mushrooms whole. Peel and remove the stalk before adding a generous spoonful of chilli jam to each - grated cheese is optional. Bake in a hot oven until the mushrooms are cooked and the jam is bubbling. Delicious!
Vinegar...in a drink?? Yes, really! Try this healthier twist on a Bloody Mary...a Chilli Mary, made with green tea and chilli vinegar. Mix together * Green tea (2 teabags brewed in 300ml of boiling water and cooled) * 60ml chilli vinegar * 4 tablespoons tomato purée (I used double concentrate in a tube) * Worcestershire sauce - just add to your taste. * 1/4 teaspoon celery salt * 1/4 teaspoon ground back pepper Swirl a celery stick in each glass. Ice and Vodka optional...Cheers! Serves 2.
This month we are featuring our home grown chillies. We grow the same varieties each year and despite the cold weather, we still have plants in our greenhouse and chillies to pick. Our chillies have a bit of heat which works well with the slightly sweetened vinegar. Customers often ask us for ideas on ways to use our vinegars so here is a super quick and simple recipe for stir fried chilli broccoli. Perfect as a side dish. Coat broccoli florets in a marinade made from 2 parts of chilli vinegar 1 part oil (rapeseed is my favourite and this garlic infused one from Derbyshire based Brock & Morten is just the best!) Finely sliced garlic Chopped chillies Stir fry everything in a hot wok or frying pan and finish with a few more chopped chillies and a pinch of salt and pepper.
Thermals at the ready as we start back at markets this weekend. This month is all about our home grown chillies and we hope you’ll stop by and try some of our winter warming products....chilli vinegar, our popular smoky chilli ketchup and chilli and garlic jam.
