Weekend Fakeaway, Unislim style, anyone? TACO FRIES Serves 4: 1 Bite per serving. 400g Extra lean mince 1 tin Chopped tomatoes 2 (minced) Garlic cloves 1 tbsp Tomato purée Chopped onion Chopped red and green pepper 1 can (optional) Kidney beans cup Beef stock 6 per-person Baby potatoes (to add a kick) Cayenne pepper, paprika and fresh chilli Low cal spray-oil 120g Low fat cheese Fries Chop baby potatoes into wedges, add 1 tsp olive oil and paprika. Toss the bowl until potatoes are nicely coated.Place in a 180degrees preheated oven for about 35-40 minutes or until golden. OR Pop 400g of Gorge Us chips in the oven and cook for 15 mins at 225°C Mince Heat pan with oil and sautée onions and garlic. Add mince and cook untill brown. Stir in tinned tomatoes, purée, peppers, kidney beans and chicken stock and allow to simmer. Mix in herbs and spices. Taco Sauce (Optional) Mix together 3 tbsp lighter than light mayo, 2 tbsp tomato purée, 1/2 tbsp chilli, 1 tbsp garlic, 3 tbsp water. Cover the fries in the mince mixture and top with taco sauce or opt for a dollop of low fat yoghurt instead and sprinkle each serving with 30g low fat grated cheese.

Did you know you don't have to cook a butternut squash to enjoy it's mild flavour? How about giving this delicious and different Coleslaw a try over the weekend? It's simple so Enjoy: Annemarie Ingredients: Serves 2/3 1 Small butternut squash, skin peeled off and then use a peeler to peel the rest into ribbons ½ Head of red cabbage, shredded 1 Red onion, thinly sliced 2 Carrots, grated 1 Apple, peeled and grated ½ Pomegranate seeds A handful of chives, finely chopped A pinch of sea salt and black pepper 4 tbsp fat free Greek yoghurt, heaped Juice of half a lemon Instructions 1. Put all of the ingredients into a large bowl and mix well.

Salad in Summer is very appealing but not always filling so leaves us feeling hungry after an hour. Add in some protein and that changes. We feel fuller and more satisfied. Why not give this high protein recipe a go. Enjoy: Annemarie Spicy Steak and Roast Potato Salad Serves: 4 @ ½ bite per serving. Ingredients 2 x100g Thin cut beef steaks 16 baby potatoes, halved 1 tbsp Wicklow rapeseed oil Sea salt and black pepper 2 tbsp Balsamic vinegar Juice of 1 lemon 1 tbsp Soy sauce A handful of coriander, finely chopped A handful of parsley, finely chopped 4 Garlic cloves, crushed 1 tbsp Red chilli flakes ( or to taste) 1 tbsp Paprika 1 tsp Cumin 2 Heads of romaine lettuce (or a mix of lettuce), chopped Half a cucumber, quartered 16 Cherry tomatoes 30 g feta cheese 4 Spring onions, sliced 1 Red chilli, sliced Add the potatoes to a bowl and spray with some Wicklow rapeseed/sussed oil and season with salt and pepper. Put in a preheated oven at 200c for 35 minutes. 10 minutes before the potatoes are cooked, pour the balsamic vinegar over the potatoes, stir and put back in the oven for the reminding 10 minutes. 1. Make the dressing by mixing together the Wicklow rapeseed oil, lemon juice, soy sauce, coriander, parsley, garlic, red chilli flakes, paprika, cumin and salt and pepper. 2. Add a little spray oil to a pan, season the steak and then cook on 2 minutes each side for medium. Set aside and cut in to strips. 3. In a large dish, add the lettuce, cucumber and tomato, cooked potatoes and sliced steak. 4. Drizzle the dressing on top and then crumble over feta cheese. To finish, sprinkle with red chillies and spring onion.

Keeping meals and snacks simple for busy people is the way to go. Charlene made the Chicken and broccoli bake from our Summer plan. I did a Chicken dinner using a Maggi bag. Soup and a sandwich is a quick Lunch and snacks are kept simple too.

Serve hot today and cold for Lunch tomorrow. QUICHE WRAP 1 red onion 3 slices cooked ham small tin sweetcorn 2 eggs 6 cherry tomatoes 1/3 cup of milk 30gr low fat cheese, grated (optional) salt/pepper Spray or lightly grease an oven proof dish. Into a sprayed pan put all of the ingredients apart from the eggs, milk and 3 of the tomatoes. In a mug beat the eggs and add the milk. (there should be about 2/3 of the mug full) Place the wrap in the dish and press into the sides evenly. Add the contents of the pan and cover with the milk mix. Finely slice the 3 remaining tomatoes and put on top. Sprinkle the cheese (if using). Bake at about 200deg for 35-40 minutes. The quiche with be set and slightly browned when done. This is 1 bite if using cheese. This is also just my version, you can use peppers, mushrooms, baby spinach, rashers, whatever combination you like.

Newbridge: What a great morning we had in class. Triona took her one stone cert and Donna took her half stone cert. Our Sleek of the week is Mary who had an amazing 6.5 pounds down. The average loss was 2 pounds. Congratulations to all who had that minus this week. Summer bodies are made in Spring, they say. We are certainly applying that in Newbridge. Want to get "Your" Summer body underway? Join our super Class at Newbridge Town Football Club on Thursday's from 9:30 to 1:15 and evenings from 5:45 to 6:45. Talk times: 10am and 6pm.

Salsa is a very simple recipe and this one is just that. Enjoy: Annemarie SWEETCORN SALSA Ingredients – Serves 4 – 1 tin (300g) sweetcorn, drained – 1 red pepper, diced – 6 tomatoes, diced – Half a red onion, diced – 10g coriander, finely chopped (you can use parsley instead) – 2 jalapeño peppers, diced (less if you don’t like spicy) – Juice of 1 lime – 1 tbsp Olive oil – 1 tbsp cider vinegar – 2 garlic cloves, crushed – Pinch of sea salt and black pepper 1) Put all of the ingredients in to a bowl and mix well.
