Individually handmade cookies from West Cork! We have been making cookies, biscuits and crackers in our bakery in the market town of Dunmanway – “The Friendly Heart of West Cork” – since 2003.
We started making our cookies by hand through necessity, then realized how much better they were made that way, rather than on a machine.

Still with the Dunnes Stores "Simply Better" tastings last weekend, here's Ger at the flagship Cornelscourt store in Dublin on Sunday, with Leann the manager of the Simply Better dept, and Yvonne the demonstrator. Dunnes are gradually increasing the SB range - top-quality food made with top-quality ingredients, from small (often artisan) Irish suppliers who are passionate about their products - which is great for shoppers and small producers alike!

Dunnes Stores are presently promoting their "Simply Better" range with tastings in larger stores, and the Simply Better Irish All-Butter Shortbread varieties we make for them have been featured. Here is Richard today in the Bishopstown Court store on Bandon Road in Cork, with Joe the Manager and Lindsay the Demonstrator. We're happy to say the biscuits were getting a great response from the samplers.
We were delighted to see that two of the cracker varieties we developed and make for Sheridans Cheesemongers came out well in yesterday's Irish Examiner test to find the top 8 crackers in Ireland. Ger and Richard pictured on the Taste Cork stand at the IFE (International Food Expo) at ExCel in London's Docklands this week, where a dozen specialist producers from County Cork displayed their products. Our new packaging and some new lines had their first outing - we received the new boxes two days before the show opened, so it was a bit of a rush to get them to London in time. Starting in a few weeks, the old "Cookies of Character" will start to be replaced by the "West Cork Biscuit Co." brand, which we believe will have a greater impact on the export markets we want to reach. The West Cork name emphasises the quality of the ingredients we use - pure Irish butter being the prime example - and the excellent packaging designed by the Greenhouse agency in Cork is certain to attract the discerning customer. We'll shortly be adding new varieties to the range, and they'll be featured on Facebook and our website (which is undergoing reconstruction at the moment). We'll be posting pictures of the new packaging over the coming days.

Lovely to get a mention in the Southern Star last week, actually two mentions. One for our Oat and Cranberry cookies and another for our Irish Wholemeal crackers which are made for Sheridan's Cheesemongers in our premises here in Dunmanway.
Inside Track: Richard Graham-Leigh, West Cork Biscuit Company
It's been longer than we thought - the months slip by and the bakery gets busier and busier and all sorts of interesting (exciting, even) things happen, and nothing gets posted on Facebook. Well, that's about to change, as we repackage and re-name our original range of biscuits and cookies, which in a couple of months will go under the banner of the "West Cork Biscuit Co.". We've tweaked a recipe or two as well, putting higher-cocoa Belgian chocolate in the Chocolate Chip Cookies, for instance, and more crystallised ginger in the Ginger Spice Biscuits, but basically they're going to be the same fine hand-made cookies, with the same Irish butter, top-quality ingredients, and no artificial additives. The new packaging is scheduled to be ready before the end of September, and we'll keep the Facebook page updated - now we have someone in the the office to do that! - and the website will be re-vamped in the next few months, too. We'll probably have to change the name of the page too, but there'll be plenty of notice!
