🍩o a t • m u f f i n s🍩 . Nom nom nom 🤤 . I get asked every time I make these, how?! And why other people’s don’t come out the same 😅 It must be a magic oven💫 But here’s the secret of exactly what I do 🤭⤵️😅 . 🍴r e c i p e🍴 • 40g oats 🌾 {healthy extra B | or 7 syns} • 2 eggs 🍳 {free + protein} • 1/2 a flavoured fat free yogurt like a Mullerlight {80g} | Quark {80g} • 1 tsp vanilla essence / any flavouring {free} 🥣 Beat it all in a bowl with a fork {only blitz in a blender, if you’re using this mixture to make waffles or pancakes} • Fill silicone muffin cases with mixture & bake in a preheated fan oven on 190 degrees for 35-40 mins on the middle shelf {shelf is essential} 🤓 • When cooked, remove from the oven, cover with a tea-towel & leave to cool completely! This helps them stay moist but become a more cake-like texture! Sometimes I make them the night before & once cooled, refrigerate them 😋 • You can add fillings if you like 🍯 such as Nutella 🍫 or jam 🍓 etc depending on what you like 😇 Just remember to weigh, measure & count those syns 😉 . 👩🏽‍🍳h a p p y • b a k i n g🥄 . e n j o y 💋 . “This house🏡runs on love💕& food🥘” . 🥢Asian inspired honey soy chicken🥢 . Sometimes the quickest most random thrown together dinners...are the nicest!🍜 . 🍴r e c i p e🍴 • Marinade diced chicken in light soy sauce, dark soy sauce, oyster sauce, 2 tsp @sweetfreedomuk fruit syrup (1 syn), 1 tsp Chinese 5 Spice, a dash of frozen chopped garlic & chilli🌶for about 20 mins • Meanwhile, cook & blanch rice in cold water & set aside 🍚 for egg fried rice making🥡 • With any Asian dish, pak choi is always a complimentary addition to the meal ~ pick up pak choi in your local fruit & veg shop and slice lengthways in half • For this dish, you can add any stir fry type veg you like ~ my faves in this are baby corn 🌽 mangetout, beansprouts, peppers, onions & peas • Stir fry the chicken & veg until cooked to your liking, this only takes a few mins so it’s one of those quick fire 🔥 two woks going at once kinda meals 🙅🏽‍♀️ turn the heat right down, sit the pak choi on top of the stir fry mix & pop a lid on top while you make the egg fried rice 🍚 • In another wok, spray well with @frylighthq & add the cold cooked rice...add a splash of soy sauce, oyster sauce, Chinese 5 Spice and stir to coat. • Create a well in the middle, and pour in a beaten egg, stir quickly with a silicone spatula until it scrambles and toss with the rice & a handful of peas! • When the egg is almost cooked, remove from the heat, as you don’t want to let it overcook & dry out too much ~ it will continue to cook in the heat once off the heat 🙂 .
