I’m so grateful to Seamus O’Heverin for showing me around his farm and allowing me to see the processes that go into producing some of the best beef around, a local breed the Moil cow is a true sign of how farming can be done without leaving a Massive carbon footprint, the result is an amazing flavored beef that has been well looked after and is every chefs dream to use. A perfect addition to our Mayo V’s Donegal menu for the weekend.
