Unser Kaffee
Wir lieben es, Kaffee zu brühen, zu schmecken, zu lernen und anderen ein außergewöhnliches Kaffee-Erlebnis zu bereiten. Kaffee ist unsere Passion und damit sind wir nicht allein. Denn hinter jeder Tasse guten Kaffees steht eine Kette von engagierten Menschen, die Farmer, der Röster und die Baristi.
Unsere Espressoblends werden von den Mikroröstereien “Bonanza Coffee Roasters” (Berlin) und “The Coffee Collective” (Kopenhagen) geröstet und können in ihren Bestandteilen mit den Ernteperioden variieren. Lassen Sie sich von unseren Baristi beraten. Hinweise zur Herkunft und Geschmack sowie die aktuelle Zusammensetzung der Blends können Sie auch auf den Tafeln an den Kaffeemühlen finden.
Um zu zeigen, wie vielfältig Kaffee und seine Aromen sein können, bereiten wir wechselnde Espresso- und Filterkaffees von außergewöhnlichen Mikro-Röstereien zu. Das aktuelle Menü können Sie an der Brew Bar einsehen.
Weil der Reifegrad von Kaffee großen Einfluss auf den Geschmack hat, verwenden wir für unsere Filterkaffees keine Bohnen, deren Röstdatum länger als 15 Tage zurück liegt. Die Espressoblends reifen zwischen dem 5. und 15. Tag nach ihrer Röstung zum Höhepunkt. Alle Shots werden nach Bestellung frisch gemahlen.
Für Milchgetränke verwenden wir Demeter-zertifizierte Bio-Milch aus dem Öko-Dorf Brodowin, die täglich frisch geliefert wird. Wir erhitzen sie nicht über 65°C, damit sie ihre Süße nicht verliert. Die Milch wird für jeden Kaffee frisch aufgeschäumt und nicht zweimal verwendet.

Every great cup of coffee requires input from the farmers, roasters and baristas.
Our two staple espresso blends are roasted by Bonanza Coffee Roasters (Berlin) and The Coffee Collective (Copenhagen). Due to seasonal changes and different bean origins these espresso blends will vary in composition and thus in taste. The best way to stay informed is either to speak to one of the baristas or to have look at the blend descriptions located in front of the grinders.
We aim to showcase the diversity of coffee, and for that reason we offer freshly brewed filter coffee from changing exceptional micro roasters. A menu of current filter coffees can be found at the brew bar.
Once coffee beans have been roasted they begin to mature and release carbon dioxide gas in a process known as "degassing", which affects the flavour of the coffee. We only use filter coffees that are less than fifteen days past their roast date and we consider our espresso blends to be at their optimum for use between the fifth and fifteenth day after roasting. Our espresso coffee is always ground fresh to order.
We only use Demeter certified organic milk from Brodowin which is delivered fresh daily. The milk is steamed fresh to order and is never used twice. In order to retain the milk's natural sweetness we try to avoid heating it beyond 65°C.
