If you want to know what it’s like to be a chef, look at my hands. I’ve been working in professional kitchens for more than a decade, in Italy and Toronto. Certified with a specialty in traditional Italian pasta, not a day goes by when my hands aren’t busy kneading dough. And it all goes back to my husband’s grandmother, Nonna Rosa.
It was 15 years ago. I was with my soon-to-be husband, Jo, and we were meeting his grandma, Nonna. She looked at me and asked if I knew how to make pasta. Real pasta. By hand. Soon enough, I found myself taking a three-hour test. Nonna Rosa made it clear: if I was to marry her grandson, I had to be a pasta master.
Nonna Rosa taught me the art of Italian pasta. It must be made with love, one piece at a time. This patience pays off every time I see people dig into my dishes, their faces smiling. They feel the love. I know I do.
After all, when you’re working with 300-year-old recipes, it’s worth taking your time to get it right.
