SUPER SUPPER SATURDAY ZUCCHINI PASTA Ingredients: 1/2 whole garlic clove 1 tbsp oil - olive 1 chicken breast 1/4 cup feta cheese 1 cup spinach leaves - fresh 1 whole zucchini 1/4 whole Onion * to taste pepper - black, fresh ground Directions: 1. Cook chicken breast as desired (bake, poach, or sauté using cooking spray). While cooking, mince garlic; peel and finely chop onion. Slice zucchini into thin strips with a spiralizer or grater. 2. In a large non-stick pan, heat the oil. Add the garlic and onion then sauté for 3 to 5 minutes, till just tender. 3. Add the zucchini strips to the pan and cook, stirring occasionally for 4 to 5 minutes. 4. Add the spinach and sauté for 2 to 3 minutes, until wilted. 5. Place all the ingredients in a serving bowl and top with the feta and black pepper. 6. Chop chicken and add to bowl. ENJOY!!!

Super Supper Saturday SALMON WITH PINEAPPLE SALSA Ingredients: 1/4 whole red onion 1/4 cup Pineapple, Fresh - peeled and cut into chunks 4 oz salmon filet 1/2 whole garlic clove 1 tbsp mustard - Dijon 1/4 cup Low-Sodium Soy Sauce 6 whole asparagus spears 1 tsp butter 1/2 cup cooked Rice 1 1/2 tsp(s) juice - orange 1 1/2 tsp(s) cilantro - fresh 1/4 whole bell pepper - red/orange/yellow Directions: 1) Prepare veggies and herbs: chop onion and bell pepper; mince garlic; and chop cilantro. 2) In a large glass bowl, combine soy sauce, mustard, and garlic. Add salmon and turn in the mixture to coat. Cover bowl and refrigerate for at least 10 minutes. You can marinate several hours, if desired. 3) Prepare rice as directed to achieve 1/2 cup, cooked. 4) In a small bowl, combine pineapple, onion, pepper, cilantro, and orange juice to make salsa. 5) Remove salmon from the marinade. Grill salmon on medium to high heat for about 10 minutes, until it flakes when tested with a fork. There is no need to turn the salmon. Alternatively, broil in the oven for 12 to 15 minutes. 6) Prepare asparagus by steaming. 7) Top salmon with salsa and serve with rice topped with butter, and asparagus.
