I can't wait to get home at the end of the work day and dig into this big pot of slow cooker bone broth. it's rich in minerals that support the immune system and contains collagen for skin & joint health and glutamine to reduce intestinal inflammation. I aim to drink 1 cup a day and this slow cooker method makes it so easy to always have a fresh supply • 2 lbs organic beef bones • 2 carrots chopped • 2 celery stalks chopped • 6 dried shiitakes (optional) • 1 onion chopped • 4 whole cloves of garlic • 1 jalapeño • 2 bay leaves • salt & pepper (to taste) • dump all of the ingredients into your slow cooker along with 6 cups of filtered water. cook on low to 12 - 24 hours, strain and sip out a mug. #thisdoctorskitchen

cold snowy nights like these call for a big plate of comforting spaghetti & meat sauce. tonight's dinner is this healthier version of the classic bolognese, it contains less meat and way more vegetables • 1lb ground beef • 1 cup sliced mushrooms • 1 cup split red lentils • 1 jar marinara sauce • 1 tbs ghee or coconut oil • 1 tbs minced garlic • 1 tsp each: salt, pepper, chili flakes, oregano, rosemary • heat oil in a dutch oven or deep pot, add garlic, mushrooms, beef & spices and cook until browned. mix in the tomato sauce and let simmer on the stove for 30 minutes, add lentils & cover to cook for another 15 minutes on low. we ate ours served over brown rice spaghetti & topped with raw sheep cheese and nutritional yeast #thisdoctorskitchen 🍝

tonight the clinic is hosting an info session for local optometrists to demonstrate how we're integrating traditional optometry care with naturopathic medicine here at BVEC (bronte village eye care). we'll be discussing fish oil for dry eyes, supplements to help prevent macular degeneration and how we're using nutrition [see muffins] to improve eye health. these gluten free muffins contain an entire pumpkin, which provides beta-carotene & antioxidants to encourage healthy vision.

snacking on some hummus while we prep dinner. homemade hummus is insanely easy to make & infinitely better than the store bought stuff. my go to humus recipe makes enough to last us a whole week • 1 can chickpeas drained and rinsed • 1/4 cup tahini • juice from 1 large or 2 small lemons • 2 cloves garlic • 1 tbs olive oil • 1 tbs cold water • 1 tsp salt • 1/2 tsp hot sauce • blend chickpeas in food processor for 1 minute, add remaining ingredients and process until very smooth, serve topped with za'atar, more hot sauce and a drizzle of olive oil. #thisdoctorskitchen

A large new meta-analysis (including data from over 300 studies) published in the British Journal of Nutrition adds to the current evidence that organic farming practices substantially increase key nutrients in foods. baking a batch of this delicious #paleo banana bread with the family this morning 🍌 2 very ripe bananas (mashed) • 1/4 cup maple syrup • 2 eggs • 1 tsp vanilla • 1 cup almond flour • 1/3 cup coconut flour • 1 tsp baking soda • 1/4 cup dairy free dark chocolate chips • mix the wet ingredients & dry ingredients separately then pour the dry into the wet mixing very well. fold in chocolate chips and pour mixture into a greased loaf pan. bake 40 - 45 minutes at 350, cut & serve once the bread has cooled completely. #happyfamilyday from #thisdoctorskitchen

I felt like 'bar food' today after work so we whipped up a batch of these healthier zucchini sticks, better than fried • 1/3 cup ground almonds • 2 tbs gluten free breadcrumbs • 1 tsp garlic powder • 1/4 tsp sea salt • 1 egg • 1 zucchini • mix the almond meal, breadcrumbs, salt + garlic powder in a small bowl. slice the zucchini into small sticks, dip zucchini into whisked egg & then coat with the almond mixture. bake 15 minutes each side at 375 degrees & serve with tomato sauce 🍅 #thisdoctorskitchen

presenting my new favorite (lazy) weeknight meal ... slow cooker Mexican pulled chicken. insanely easy & filling, and I adore any dinner recipe that requires no effort after a long day at the clinic • 4 organic/ethical chicken breasts • 2/3 jar of salsa • 1 tbs: garlic powder, chili powder • juice of 1 lime • 1 tsp: cumin, cayenne • dump everything into the slow cooker (@vitaclaychef) and cook on low for 8 hours then gently pull the meat apart with two forks. I serve mine topped with additional salsa, hot sauce, avocado and baked sweet potato rounds. #thisdoctorskitchen
