Chef Hamid's Brown Sage Butter Sauce Things you will need Pasta of your choice (we suggest Sausage ravioli) fresh sage Butter White wine Parmesan Salt Brown Sage Butter Sauce recipe Bella Vita Cucina’s Ravioli is made fresh in house.This ravioli is a mixture of sausage and tender chicken pieces. Step 1: Chop fresh sage, be careful not to use too much as it is powerful. Step 2: Melt 4 tablespoons of butter on medium heat. Step 3: Cook 2-3 mins or till butter turns a golden brown and is foaming. Step 4: Add fresh sage to butter and stir. Step 5: Sauté sage & butter together, then carefully add touch of white wine. Step 6: Add ravioli to boiling water. Make sure to add salt to water, pasta tastes much better when cooked this way. Adding salt to the water adds flavour, which is absorbed by the food. Step 7: After boiling pasta for 2-3 mins remove ravioli from water, and place in the sauce. Step 8: Simmer ravioli and sauce together for 1- 2 mins, adding parmesan cheese to thicken up sauce. Step 9: Remove ravioli from pan and add your desired amount of sauce. Add pepper, garnish with sage, add parmesan. Step 10: Serve

Bella Vita Cucina presents - Cooking with Chef Hamid. In this video Chef Hamid shows you how to cook our signature lamb dish. Let us know what you think. Things you will need for recipe are below. Alberta grain feb rack of lamb olive oil Steak spice Martelli White truffle oil Fresh rosemary Basting brush (paper towel works fine if you don’t have one) PATIENCE Below are recipe's for roasted potatoes and steamed vegetables. Also we have a recipe for mushroom and olive oil tapenade. Roasted potatoes Ingredients 2 pounds red potatoes, cut into quarters 2 tablespoons vegetable oil 1 teaspoon salt 1/2 teaspoon freshly ground black pepper 1/2 teaspoon dried rosemary, crushed Directions Preheat oven to 450 degrees F (250 degrees C). Place potatoes in a large roasting pan and toss with oil, salt, pepper, and rosemary until evenly coated. Spread out potatoes in a single layer. Bake in preheated oven for 20 minutes, stirring occasionally. Serve immediately. Steamed Vegetables Ingredients 2 tablespoons butter or margarine 1small clove garlic, finely chopped 1 teaspoon grated lime peel 1teaspoon finely chopped serrano or jalapeño chile 1/2 teaspoon salt 1 tablespoon fresh lime juice 3 cups cut-up fresh vegetables, such as broccoli florets, cauliflower florets and/or sliced carrots Steps 1 In 1-quart saucepan, melt butter over low heat. Add garlic; cook and stir about 20 seconds. Add lime peel, chile, salt and lime juice; mix well. Set aside. 2 In 4-quart saucepan, place steamer basket. Add 1 cup water; heat to boiling. 3 Add cut-up vegetables to basket; cover and cook 4 to 5 minutes or until crisp-tender. 4 To serve, place vegetables in serving bowl. Add butter mixture; toss gently to coat. Mushroom & Olive oil Tapenade Ingredients ½ Onion, finely chopped 2 cloves Garlic, crushed 1 Tbsp Chopped thyme 400 g Mixed mushrooms, finely chopped 50 g Butter ½ cup Port, or madeira or gin 50 g Kalamata olives, pitted 50 g Chopped walnuts 1 Tbsp Capers 1 large handful Chopped parsley 1 Lemon, zest and juice 3 White anchovies 1 splash Olive oil Directions Gently fry finely chopped onion, garlic, thyme and mushrooms in butter for 5-7 minutes until soft. Add port (or madeira or gin) and cook to reduce into a paste. Cool. Blitz mushroom mix with pitted kalamata olives, walnuts, capers, chopped parsley, lemon zest and juice, white anchovies and a big glug of olive oil to form a chunky tapenade. Season with salt and pepper. Chill to serve.
