Final dinner menu discussions tonight, super excited to put these dishes on tables this Tuesday night!! We consider it very important to keep re-inventing ourselves and providing you guys with a fresh approach. To give you a bit of insight into what it takes to come up with a new menu, these are the steps we follow; - Research & development of menu ie. Look and feel, what's trending and what's emerging – Analyse sales and cost statistics of existing menu items, so as to not take away any of our customers favourites – Co-ordinate with management team both front and back of house discussions – Chef’s concepts and ideas put to table - Sampling of dish concepts and tastings (the hardest part) - Discussing logistics and suitability of the dish in terms of prep time, menu fit, pricing & time in season – Costing of dishes to determine price point – Menu template is created to compliment overall feel of menu – Second round tastings, plating decisions & tasting notes for team – After menu release, customer feedback is encouraged and the menu altered based off feedback It is a lengthy process that generally takes a month to put table. Luckily we all love what we do, and it makes the process all the more worth while to see more and more bums on seats with each menu change 😊 #melbournefood #restaurantlife #makingamenu #foodie
