Try this grain salad with broccoli, sweet potatoes and tomatoes. Ingredients: 1/2 cup (80g) quinoa 1/4 cup (60ml) olive oil 1 teaspoon honey 1 teaspoon Dijon mustard 1 teaspoon white wine vinegar 1 small bunch dill, roughly torn 1 small bunch mint, leaves torn1 cup broccoli 1/2 cup sweet potato 1/2 cup grape tomatoes 1 teaspoon ground cumin 1 teaspoon ground coriander 1 avocado, cut into 1cm pieces 1 red onion, thinly sliced Method: Cook the quinoa in a saucepan of simmering, salted water for 20 minutes or as per the cooking instructions. Drain, then set aside to cool. Whisk together oil, honey, mustard and vinegar, then season. Add quinoa herbs, rocket and spices, and toss to combine. Add sweet potato, avocado, broccoli, tomato and onion.

For a quick snack, these fritters can be made in no time. Or serve them with sour cream and a salad for a light dinner. Ingredients: 4 zucchinis, grated ½ cup corn kernels 2 shallots, finely chopped 2/3 cup plain wholemeal flour 2 eggs, beaten Salt and pepper to taste 3 tbsp olive oil Method: Squeeze as much liquid as possible from the zucchinis, then place in a bowl with the corn and shallots. Sprinkle over the flour and mix well with a fork to combine. Add the egg and season with salt and pepper. Mix again until a batter forms. Heat enough oil to cover the bottom of a non-stick pan over medium heat. You may need to cook the fritters in batches depending on the size of your pan. Dollop 3 tbsp of batter into the pan per fritter and cook for 2-3 minutes on each side until golden.
