Using all the leftover items from our pizza night: bacon, capsicum, mushrooms, salami... boiled up some jacket potatoes, smashed them with a little butter and Country Onion and Chive dip mix, mixed everything together and sprinkled with cheese... baked in the oven for 45 mins at 180, and a little dish of perfection was born! What do YOU use the Country Onion and Chive dip mix for?
Been craving homemade bread products lately, and YIAH has helped deliver in a big way! Homemade herby garlic bread with pasta one night, homemade pizzas the next night, now pumpkin soup with homemade bread rolls tonight. One happy family here!
Apologies yet again for my lack of posts of late... been super busy with a newborn. No photos tonight, but dinner is a Scotch Pork roast with Persian salt and Pulled Pork spice, with crackling flavoured with the new French Perfume Salt... Aussie roast and Porcini salt on the potatoes. Absolute bliss! What are you making for dinner tonight?

Something we did at home the other day and I forgot to post... In an experiment to try and be more self-sufficient, we made some home-made ricotta cheese. The kids were excited at making it, but weren't overly excited with trying it. So to make it more interesting for them, I diced up some apples, stewed them in some honey and Country Baked Apple Pie spice, and put the apple mixture and ricotta into puff pastry. The end result was a cross between apple turnovers and apple pie. Great success, one of the kids ended up going back for THIRDS!

One of my all-time favourite biscuits comes from Germany. It is called Pfeffernùsse and translates to Ginger Nut. Soft, gingery and coated in icing. Can't get much better than that! I decided to attempt making them at home. This is my first attempt, and while it was delicious it wasn't quite the right texture, was still a little too dense. So I will continue to experiment and get it right before I post the recipe.

What do you do when you have bananas that are too ripe to eat? Why, make muffins of course! I simply added some Country Bake Apple pie spice and some Chai Spice sugar to my regular banana muffin recipe, then iced it with a Banoffee choc powder icing... Simply too good!

Apologies for not posting much. Between Christmas, New Years, personal study and preparing for a new baby, I've been all over the place! Anyway...... Made these for lunch today as a special treat, and I almost couldn't get a photo as they were demolished so quickly! Cheese Puffs 1/2 cup milk 1 egg, lightly beaten 1 Tb YIAH Country Onion and Chive dip mix 1 cup self-raising flour 2 cups grated cheese 3 bacon rashers, diced Preheat oven to 200C (180C fan-forced). Line a baking tray with baking paper. Mix egg, milk and dip mix together. Add remaining ingredients and stir well to combine. Drop large teaspoons of the mixture onto the baking tray. Bake for 20 minutes or until golden brown. So fast, easy and most importantly YUMMY! Tasted like a perfect blend of a cheese and chive scone, and a bacon and cheese roll. You could use any of the YIAH dip mixes, personally I'd go with Capsicum Pesto or Tapenade another time. These were so good, even my super-picky daughter who swears black and blue that she HATES cheese couldn't get enough of them. Photos are of a plate full and then 10 second later... lol Definitely a big win!
