Digestive action of papain
THE MANY USES OF PAPAYA The many beneficial effects of papaya (or papaw) on health have made this tropical fruit a member of the currently much promoted 'superfood family', albeit its beneficial effects have long been utilised in formulations such as the papaw ointment by TP Lucas produced for more than 100 years in Brisbane. Among a range of natural products (antioxidants, phytonutrients), vitamins and minerals, the papaya also contains the special digestive enzyme papain. The uses of papain are the subject of the next series of a popular German TV Quiz Show (Wer weiß denn sowas?), for which Emma Klepzig, together with Madeleine Dallaston and Megan Cross in the Structural Chemistry Program [1], led by Andreas Hofmann at Griffith's Eskitis Institute, have developed an animation illustrating the digestive action of papain.
