Over on our Instagram page we do this thing called #jetingaboutonwednesday. Every week we go out and see how all the various produce lines we deal with can be incorporated into amazingly delicious meals. Recently we've been packing lemons for a customer at our JET Direct warehouse at Acacia Ridge, and here's a prime example of how to incorporate them into your next meal. Commune Espresso Cafe at Burleigh Heads makes an amazing Tuna salad, which is complimented nicely with a squeeze of lemon. It's hard to improve on Mother Nature but if you want to try, start with passionfruit curd. It's easy to make and amazingly useful, adding a tropical touch to desserts and cakes. Swirl passionfruit curd through softened vanilla ice-cream and refreeze for a delicious, handy dessert.
